Chicken Vegetable and Rice Curry - Taste and Create


Hope you all remember my Choco cup which was posted last month for Taste and create group and I was paired with Manjula from DesiFiesta

Likewise, this month I was paired with a blog - NoReason Needed. Lovely blog and has lots of baking stuffs... Unfortunately I was not able to do her baking goodies... So finally chose her chicken recipe to try. The taste was really too good with a delicious flavor and preparation part is also so simple ... 
The Actual recipe calls for cauliflower and celery but due to unavailability I just skipped those couple of veggies. For me this is a perfect lunch box recipe and planning to try this again with the skipped veggies in future… Thanks for Taste and create team through which I got to know about this lovely blog and to try this delicious rice… Sorry for posting it little late!

Ingredients:
  • 250 gms Chicken, boneless and chopped into cubes
  • 3 Tbsp All purpose flour
  • 1 Tsp Pepper powder
  • ½ Tsp Salt
  • 2 Tbsp Vegetable Oil
  • 1 Onion, finely chopped
  • 2 Cloves Garlic, Minced
  • 2 Tsp Curry powder
  • ½ Cup Chicken Stock ( I used 2 chicken cubes )
  • 2 Medium sized carrots, chopped finely
  • 1 Cup Rice, cooked


Method:
  • Mix chicken, all purpose flour, pepper and salt in a plastic bag (Zip lock) and shake well.
  • Heat oil in a pan and add the flour coated chicken.
  • Fry them till it turns light brown color.
  • Remove and drain in a kitchen tissue.
  • Now add onions in the same fried oil followed by garlic and sauté well for 5 minutes.
  • Add curry powder, chicken cubes / stock, carrots and fried chicken.
  • Mix well and cook for 5 minutes in a low flame.
  • Now mix the cooked rice in the chicken mixture.
  • Serve hot.

Serving Options :

Serve hot with Tomato sauce or chilli sauce.

Sangeetha : Hope you know my name J I am a chennaite and for name sake I can tell my native as Salem. Currently playing many roles like 4 yrs old Wife, 3 yrs old Mom, 8 yrs old Software Engineer etc. etc. Always love to be as HOME MAKER with NO experience in it J

Entire Recipe index was prepared by me and tested by hubby. You can find majority of Vegetarian dishes, here and there some Non-veg items. Priya : Please share some kitchen tips or secrets of yours..

Sangeetha :

a. If your pressure cooker gives any trouble like water/pressure leakage after closing it place ur gasket in freezer for the whole day and use, u can find the difference.

b. Whenever we buy some steel plates or any steel cookwares, you find a brand label, when we try to remove it surely it will have gum stain or we couldn’t peel the label properly. To overcome that problem, show it in the flame (Bottom of the label) for a while, it will automatically get peeled off ! Interesting is it !! This applies only for STEEL OR BRASS product…

Priya : What do you like in my blog and please share your suggestions to improve mine.

Sangeetha : Priya, I like your blog completely. The way you presented and aligned the posts. Its looks neat and If am in need of any recipes, I can easily indentify the section and I can grab it. Always I use to admire your post EGG BRIYANI, (http://priyasmenu.blogspot.in/2013/03/egg-briyani.html) the way you prepared and presented it. You have a real awesome blog. Forgot to tell you, am in big love with that cute cake with white rose bunches which I can see while loading your blog !!! That’s a good template, if am not wrong :)

Now, its time to share my recipe for your views. When Priya asked to do a Guest post, I gave her some three basics recipe to choose. Being a No-veggie person, she opted this PEPPER CHICKEN MASALA out of those three.

Priya, as opted by you, here comes you favorite Non-Veg recipe… Enzooyyyyy !!!

PEPPER CHICKEN MASALA:

INGREDIENTS:

  • ¼ kg CHICKEN PIECES
  • 2 Nos.CHOPPED ONION
  • 1 NO.CHOPPED TOMATO
  • 1 ½ SPOON GINGER-GARLIC PASTE
  • 1 SPOON CHILLY POWDER
  • PINCH TURMERIC POWDER
  • 1 ½ SPOON PEPPER POWDER
  • ½ inch CINNAMON
  • 5 Nos CLOVES
  • 1 SPOON FENNEL SEEDS
  • 1 SPOON MUSTARD
  • 2 NOs. GREEN CHILLY
  • 1 TWIG CURRY LEAF
  • 2 TWIGS CORAINDER LEAF
  • SALT TO TASTE
  • ½ GLASS WATER
  • 2 SPOONS OIL


PROCEDURE:
  • Heat a spoon of oil, in a pressure cooker.
  • Once done, add chopped onions, Cinnamon, Cloves, Fennel seeds and pinch of salt. Do a sauting for few mins.
  • Now add chopped tomato, ginger garlic paste, turmeric powder, spoon of chilly powder, fry it until oil oozes out.
  • Now add chicken pieces, give a hard stir until, the mixture completely coats the chicken pieces.
  •  Now pour ½ glass of water. Adjust with salt.
  •  Pressure cook it for 3 whistles.
  • Until, pressure gets released, heat a spoon of oil in a pan, add mustard, once it splutters, pour the pressure cooked items, let it gets boil, until the water gets drained.
  • Now, add pepper powder, silted green chillies, curry leaf and coriander leaf. Do it for 5 mins and put off the flame.

 Now, its time to taste !!! :)

Dates Filled Papad Topped With Apple Rabdi




Ingredients:
  • 10 Papads
  • Oil for frying


For Papad Filling :
  • 1 Cup Dates, chopped
  • 5 Tbsp Water
  • 2 Tbsp Coconut Powder
  • 1 Tbsp Butter

For Apple Rabdi :
  • 4 Cups Milk
  • 1 Cup Sugar
  • 2 Apple, grated
  • Few Saffron strands

For Garnishing:
  • 10 Almonds, Grated
  • 2 tbsp Raisins
  • Few Saffron Strands



Method:

For Papad Filling:
  • Heat butter in a pan and add the chopped dates.
  • Saute till the dates turns soft.
  • Add the measured water and cook until the dates turns mushy.
  • Now add the coconut powder and mix well.
  • Saute till the mixture becomes dry.
  • Remove from the flame and cool.
  • Prepare small balls using dates mixture and shape them into small rolls.
  • Repeat the process for remaining balls and keep aside.


For  Apple Rabdi :
  • Boil the measured milk in a thick bottomed vessel till it reduces half its quantity.
  • Add the grated apples and sugar.
  • Boil them for few more minutes and add the saffron.
  • Stir the milk continuously and switch off the flame, once it gets thick consistency.
  • Cool and refrigerate them before serving.


For Frying Papad :
  • Take one papad and soak it in water for few seconds.
  • Slowly remove them and place it in a plate.
  • Place the dates roll in a papad and fold it like spring roll.
  • Seal the ends using Maida paste.
  • Repeat the process for remaining papads and let them dry for 10 – 15 minutes.
  • Now deep fry them in batches in a medium flame.
  • Remove and drain the excess oil using kitchen towel.
  •  Now for serving, Place the fried papads in a small bowl or plate and top it up with Apple Rabdi.
  • Garnish with grated Almonds, Raisins and Saffron strands.
  • Serve.

Variations :
  • Nuts like badam, cashews, pista and raisins can also be filled along with dates.
  • Fried coconut pieces can also be used instead of powder.

Grilled Bacon n Corn Stuffed Bell Pepper




Hi friends….  Back to my blogging world after a short break... Missed my blog and blogger friends so much L Hope you all doing great J

And coming to my today’s recipe…
I tried this recipe few months back for a contest conducted by one of a blogger friend. Very delicious and tummy filling recipe. Perfect for parties and can also be served for breakfast with smoothie or fresh juice...

Ingredients :
  • 1 Bell pepper
  • 3 Tomatoes, finely chopped
  • 2 Bacon slices, finely chopped
  • 1/4 Cup Corn, frozen
  • Salt to taste
  • 1/2 Tsp Mixed Herbs ( Thyme, Oregano and Basil )
  • 1 Tsp Chilli sauce
  • 1/2 Tbsp Oil 
  • 2 Tsp Butter
  • 2 Egg Yolks
  • Chilli Flakes for Sprinkling

Method :
  • Cut the Bell pepper into half and de-seed them.
  • Place the bell peppers in boiled water and keep it for couple of minutes.
  • Remove from the water and keep aside.
  • Heat oil in a pan and add the chopped tomatoes. 
  • Cook until the tomatoes turns mushy or soft.
  • Add the chopped bacons and saute.
  • Now add the corns, mixed herbs, chilli sauce and salt.
  • Simmer the flame and cook for couple of minutes.
  • Remove from the flame and keep aside.
  • Now fill the bell peppers with the bacon n corn stuffing and place the egg yolk on top of it.
  • Sprinkle chilli flakes on top of the yolk.
  • Place them in a pre-heated grill and grill them for 10 minutes.
  • Once done, slowly remove from the grill and add 1 tsp butter in each bell peppers.
  • Serve hot.



Note :

Added butter after grilling is just to enhance the flavor and to avoid the regular cheese topping.

Confused??  Yeah, a big sorry to all my blogger friends’ coz I am not able to visit all your space regularly because of relocation… Will comment and view all your space once I get settled… Sorry again!

Now let’s meet our today’s blogger friend… Very sweet and lovely blogger, ARCHANA from Tangy Minds.. who own an aromatic baking blog. But happened to view her blog only recently and felt really bad that I missed her blog all these days. Happy to be one of her follower now. Her blog is exclusive for baking n sweet! Lots of yummy n yummy recipes hidden in her blog... And it’s so tempting too while viewing n reading her recipes….

Priya : Love to hear few words about you n your blog and who is your greatest support?

Archana : I am Archana graduated in Computer Engineering, Chennai & worked in Bharath Matrimony R & D as Software Engineer by profession. I am hearing impaired, married and having cute daughter.  I have no idea about blogging life. Before my marriage I never cooked a single thing except maggi noodles and eat along with my brother and my mom won’t allow me to cook J After my wedded life, my husband is really great cook and he has taught me everything in kitchen just like kitchen formulas J I am still a beginner in cooking and after entering the U.S. I was so much involved in baking than cooking J I was so good in baking and I feel I want to share it with my friends. My family and my friend has inspired me to do blogging that leads to my blogging life as TANGY MINDS J My blog is full of sweet tooth pastries, baked goods and treats too. I am really enjoying the life of blogging, sharing the recipes, got in contact with my dear blogger friends’ lots and lots. It was fun and loving and chatting with FB blogger friendsJ My greatest support is my dearest mom and my hubby.

Archana : My favorite Chef in Chennai is Dr.Chef Damodaran I used to watch jaya tv Suvaiyo Suvai J And an American Chef named Paula Deen J
My most favorite cookery show is FOOD NETWORK TV Channel in the U.S.
My most favorite cookbook is BAKING with Cake Boss. J

Priya : Can you share us about your first cooking experience and the recipe which you tried first?

Archana : My first cooking experience is Hyderabadi Veg biryani when I was in Chennai. I love veggies.I had cooked once with my trusted National Electric Rice cooker.It was so amazed and so tasty with lots of an aromatic spices and homemade masalas and my family loved it. My first baking experience is classical traditional Apple Pie and my brother loved it. It was baked at my home before my wedding J

Priya : What comes to your mind when you hear the word “Sweet “.

Archana : Sweet is my most favorite in all aspects. When I see the sweet at first I will have traditional boondi laddoo. At recent times when I see hindi film ENGLISH VINGLISH Sri devi made laddoos.It made me crazy to make it atleast one day J

Priya : What’s your family’s most favorite recipe which you cook? Pls share with the link if you had posted in blog.

Archana : My family’s most favorite recipe is An Indian Pastry called “DILPASANDS”

BAKLAVA is my hubby’s least favorite Turkish dessert

Priya : Please share some kitchen tips or secrets of yours…

Archana : For Baking Tips

Always use parchment paper in any cake pan to avoid sticky. If not having parchment paper, grease it with oil or butter and dust it with flour.
Wrap aluminium foil on the top of the cake to avoid too much browning while baking for the last 10 minutes of baking time.
Never open the oven door while it is baking.

For Cleaning tips:

 For cleaning silver articles, Add baking soda and salt with very hot water in a bowl. Add silver lamps small ones into it and let it sit for about ½ hour or till it gets cleaned up to remove the dirt.

Priya : What do you like in my blog and please share your suggestions to improve mine.

Archana : I liked your blog which has lots of authentic South Indian dishes and your new ones in which I have not heard of. I love your Oats Moong Dhal payasam I will make it for sure. Your blog is so simple, very creative, excellent pictures, well explained and new dishes of your own. I want you to add more and more baking recipes J

I like her blog and it is full of well explained steps and creative recipes on her own. She is so sweet and having her as my sweetest friend! She is very active in her blogging life and makes lots and lots of friends and implements new more recipes in her blog.
Here is the recipe I made it and it is very healthy one. It goes great for kids too. Ragi is very good health for everyone :)




Serves: 20 
Preparation: 10 Minutes.
Cooking Time: 20 Minutes.

Ingredients :
  • Ragi powder 1 cup
  • Powdered sugar 1 cup
  • Cardamom powder 1/2 Tsp
  • Ghee 1/2 cup
  • Badam(Almonds) or Cashew nuts coarsely chopped.
Cooking Instruction:

  • Sieve ragi powder in a bowl. On medium heat, lightly roast the ragi powder into the non stick pan for few minutes till raw smell goes. Keep aside once roasted.
  • Add 2 Tablespoons of ghee to the small frying pan, while ghee is hot, put chopped cashew nuts or badam and cook till it get light brown in color. Turn off the heat and keep aside.
  •  Sieve powdered sugar in a separate bowl and put into the ragi powder mixture. Add cardamom powder to it. Mix well.
  • Put the remaining ghee in the saucepan on medium heat till it gets hot. Turn off the heat.
  • Immediately pour the hot ghee into the ragi sugar mixture. Mix well with wooden spoon. Add roasted cashewnuts or badam.
  • Apply ghee on both sides of your hand. Make it into balls while it is semi hot. If allow it to cool then it won’t make balls.
  • Serve it and store it in an airtight container.


 Tips: Make sure the powder mixture is semi hot and make it into balls.
