Groundnut Chutney / Verkadalai Chutney / Peanut Chutney


Sharing one of my family's favourite and creamy chutney prepared using groundnuts. Easy to prepare with just 3 ingredients and goes perfect with Idly or Dosa. If groundnuts are roasted ahead, this chutney can be prepared in a jiffy. Adjust the quantity of red chillies according to taste bud.

Ingredients: 

1 Cup Groundnut / Verkadalai / Peanuts
4 Dry redchillies ( Adjust according to taste bud ) 
Small piece of tamarind
Salt to taste
2 Tsp gingelly oil
1 Tsp  Mustard seeds
1 Tsp Urad dal 
A pinch of Hing 
2 Sprigs of Curry leaves

Method:

Dry roast the groundnuts and peel the skin off. Alternately, microwave can also be used for roasting but be careful with the timing, as it would get burnt soon.

Take roasted groundnuts, dry red chillies and tamarind in a blender.

Add required amount of salt and grind into smooth paste by adding the required amount of water.

Once done, transfer it to a bowl and keep aside.

Heat oil in a small pan and add mustard seeds.

Once it starts spluttering, add urad dal followed by hing and curry leaves.

Roast and add it to the ground chutney.

Serve.


Serving Options :

Serve with Idly and Dosa.
