Pepper - Jeera Rice

Tried lots of home remedy using Jeera, Ginger, Peppercorns and Garlic to get rid of from Cold and Throat infection. Actually got fed up of the usual Rasam and Pepper kozhambu, so tried this rice using coarsely ground Jeera and Peppercorns. Very simple recipe which can be prepared with the leftover rice and happy that I found little relief from cold after taking this. Very spicy rice and worked well with a cup of hot ginger Tea. All the ingredients which I had used in this recipe has lots of medicinal properties. Garlic and Jeera, both are an excellent remedy for digestion and gastric problem. And Peppercorns are very good for cold and throat infection.



Cooking Time : 15 - 20 minutes

Ingredients :

  • 1 Cup Rice, Cooked
  • 1 Tsp Jeera
  • 2 Tsp Peppercorns
  • 5 Garlic pods
  • 1 Onion, finely chopped
  • 1/4 Cup Mint leaves / Pudina
  • Salt to taste
  • 1 Tbsp Oil

Method :

Finely chop the garlic pods and keep aside.
Dry roast jeera n peppercorns and grind them coarsely.


Heat oil in a pan and add the chopped garlic. Fry till they turn light brown color.


Add the chopped onions followed by mint leaves.


Now add salt and the ground Jeera - Pepper powder.


Add the cooked rice at this stage and mix well.


Simmer for couple of minutes, garnish with mint leaves and serve hot.

Serving Options :

Serve hot with papads oe Egg podimas.

Vanilla Cake


Sitting in a balcony with a slice of cake and cup of tea, watching all kids playing and varieties of birds flying..Amazing view right? And that too having a slice of cake baked by own was really a lovely moment for me. This cake is my favourite and reminds me of my childhood days..
Very easy to prepare and no need of any frosting !  Just Bake, Slice and Eat :)


 During my last visit to chennai, purchased few baking cake tins...and tried this vanilla cake in snow man shaped cake tin. My mom and son was so excited to see the shape and enjoyed alot. And my dad who was sleeping while preparing cake, got up by the lovely aroma of this cake. And coming to my recipe, Simple, delicious and perfect for tea time.

Ingredients :
  • 100 gms Maida / All purpose flour
  • 100 gms Sugar, Powdered
  • 100 gms Butter
  • 1 Tsp Baking powder
  • 1 Tsp Vanilla Essence
  • 2 Eggs

Method :
  • Pre heat the oven to 170 degree C.
  • Lightly coat the cake pan with butter and dust with all purpose flour.
  • Sift the all purpose flour and baking powder.
  • Break the eggs in a seperate bowl and beat until light and fluffy using electric mixer.
  • Add the butter and sugar, beat again.
  • Now add the vanilla essence.
  • Add the all purpose flour and slowly fold the mixture and mix well.
  • Mix until the batter ( idly batter ) consistency occurs.
  • Now slowly pour the batter in the prepared pan and bake for 25 - 30 mins or until the wooden skewer inserted in the center comes out clean.
  • Once done, remove and cool the cake in a wire rack.
  • Slice and serve.


Enjoy the slice with a cup of tea or coffee :)

Mint Toast


 Ingredients :

2 Cups Mint / Pudina leaves
1 Onion, chopped
2 Green chillies, chopped
Salt to taste
10 Bread slices
Butter or oil for Toasting

Method :

Grind mint leaves, onion, green chillies and salt to a fine paste adding little water.
Remove the corner of bread and toast them for few seconds.
Now spread mint chutney on the bread and toast again on the tawa.
Smear butter or oil for toasting.
Remove once done and serve with Tomato Sauce.


Enjoy this Spicy Mint Toast with Tomato Sauce for breakfast or snacks....

Celebration Time with Vegetable Pakoda - My First and Second Giveaway Prize

Hi Friends,

Hope you all are doing good.... Sorry dears! Unable to do blogging frequently coz of my health issue and frequent travel all these days.. Now back to my regular activities and love to share my happiness with you all.. Won two giveaway prizes in my recent days.

And coming to today's post.....Vegetable Pakoda !!

Am not sure how many of you know about soaking the leftover cooked rice and serving it, the next day morning with a curd and salt. In olden days, people who works in field used to have this with raw small onions and green chillies or with some pickles. Very healthy and stomach filling breakfast which gives stamina for them to work the whole day in a field. And later people used to call this as Ice Briyani :) Funny Right... !!!
In our family, they used to serve this rice with Pakodas. Yummy and delicious combination....And sometimes we serve this with masal Vadai too. Couple of days back my mom soaked the leftover cooked rice to serve it for breakfast...Instead of preparing the regular pakodas, I tried this vegetable Pakodas to make it more healthy and filling. Hot Pakodas and curd rice is really a divine for me..Enjoyed my heavy breakfast :)



Ingredients :

1 Cup Besan Flour
1 Tbsp Rice Flour
1 Cup Onions, Finely chopped
1 Big Carrot, grated
1 Big Potato, grated
1/2 Cup Capsicum, Finely chopped
Handful of Pudina / Mint Leaves, Finely chopped
2 Green chillies, Finely chopped
Salt to taste
Oil for frying

Method :

Measure one cup Besan Flour in a separate bowl and add rice flour.


Add finely chopped onions, grated carrots, grated potatoes, chopped capsicum and green chillies.


Now add the finely chopped Mint leaves and salt. Mix well.


Sprinkle water and mix the vegetable besan mixture. ( Do not add more water )


Heat oil in a pan for frying.
Add 1 Tbsp hot oil to the besan mixture and mix well in order to get the pakodas crispier.
Now take a mixture, make any shape and drop in hot oil.


Fry them in a medium flame and drain the excess oil using kitchen towel.


Serve hot.



Serving Options :

Serve with Hot tea or coffee. This can also be served as sidedish for Rice Varieties.

Garlic n Onion Chutney


Few months back, tasted this yummy and spicy chutney with hot idlis in my periamma's place. The moment we tasted, got fell in love with this chutney and the most lovely thing is she made it using mortar and pestle. Nothing can beat the taste of olden days style! Later tried this chutney couple of times after coming back but nothing like hers ( handmade ). All we need is just three ingredients for this delicious chutney. Addition of small onions gives extra flavor but can be replaced with the big onions too.. But trust me, small onions gives an excellent flavor :)

 
Ingredients :
  • 20 Garlic pods
  • 10 Small Onions
  • 6 -7 Dry red chillies
  • 1/2 Tbsp Oil ( Gingelly or vegetable oil )
For Tempering :
  • 2 Tsp Gingelly oil
  • 1 Tsp Mustard seeds
  • Few curry leaves
Method :
  • Heat oil in a pan and add the garlic pods, fry them for a minute and remove from the flame.
  • Repeat the same procedure for the small onions and dry red chillies.
  • Add everything in a mixie and grind to a smooth paste by adding salt and water.
  • Meanwhile, heat oil in a same pan and add the mustard seeds, Once it starts spluttering, add the curry leaves.
  • Now add the ground paste to the tempering and cook it for another couple of minutes in a medium flame.
  • Remove and serve with Hot idlis or dosa.
