Egg & Tomato Stir Fry / Egg Recipes


Egg & Tomato stir fry is one of the easiest dish which can be prepared in 10 minutes. All you need for this “Egg & Tomato stir fry” recipe is Egg, tomato, garlic or garlic powder and chives. The same recipe can be prepared without garlic and chives but I have included those to give some extra flavour to the dish. This recipe is adapted from Chinese cooking and made few changes according to our taste bud. The selection of tomato is very important for this recipe. It should not be too ripe and sour. And while cooking tomato, make sure to not over cook it.

And again now to bring back the energy on blogging and to motivate ourself, we started with an Egg theme as it will be an easy ingredient to buy during this lockdown period. I am truly excited to join my hands with my friend Suji after a long back and I hope this continues..


And coming to the recipe, this Egg & Tomato stir fry goes perfect with a steamed rice or fried rice. The addition of sesame oil gives a lovely Chinese cuisine flavour and aroma. The addition of sugar is just to balance the flavour of the dish. This is such an easy to prepare dish and also, many variations can be made according to our taste bud. Here comes the recipe for this delicious tangy stir fry...

Ingredients :

3 Eggs
1/3 Tsp Sesame oil
1 Tbsp White pepper powder
2 Tbsp Oil
1 Tsp Finely chopped Garlic pods or 1/2 Tsp Garlic powder 
1 Tomato, Sliced
1/2 Tsp Sugar
3/4 Tbsp Water
2 Tbsp Finely chopped Chives

Method :

Break eggs in a bowl and beat well using fork.

Add the required quantity of salt followed by sesame oil and white pepper.

Heat up a wok or pan and add 1 tbsp of oil.

Now add the eggs and scramble them.

Once done, remove from the flame and keep aside.

Now add the remaining oil to the same pan and add the finely chopped garlic if you are using the fresh ones.

Fry it for half a minute and add the sliced tomato. ( if you are using garlic powder, add at this stage )

Stir fry them quickly and add sugar followed by water.

Cover and let it cook for a minute. ( Do not over cook the tomato )

Now add the scrambled eggs to the tomato mixture and toss well.

Garnish with finely chopped chives and remove from the flame.

Serve hot.



Serving Options :

Serve with Rice or Fried rice.

Chicken - Bok Choy & Egg Stir Fry


Chicken and Bok choy compliments each other and gives a delicious, tasty and nutritious meal. This stir fry is an easy to prepare, flavourful and goes perfect with hot steamed rice. The bok choy stem is cooked along with the chicken and chinese seasoning is further stir fried with the bok choy leaves and eggs. Bok choy which is also called as "Pok Choi" is a type of chinese cabbage which is used in both cooking and traditional chinese medicine. The entire vegetable can be used along with stem and leaves. The stem part is cooked first as it takes time to cook and then leaves are added later to the dish. This veggie has a cancer fighting properties and also rich in Vitamin  C, A, K, calcium, magnesium, potassium and iron.


Ingredients :

250 gms Chicken, Boneless, Cut into pieces 
2 Eggs
1 Tbsp Oil 
1 Onion, Finely chopped 
250 gms Bok Choy
1/4 Tsp Garlic powder 
1 Tsp Soya sauce 
1/2 Tsp 5 Spice powder 
1/4 Tsp Pepper powder 
Salt to taste 

Method :

Separate the leaves from bok choy and finely chop the stem part. Keep aside.

Likewise, chop the separated leaves and keep aside.

Heat oil in a pan and add the chopped onions.

Saute till it turns translucent and add the chicken pieces.

Saute it for couple of minutes and add the chopped bok choy stem.

Cook it together for 3 - 4 minutes by closing the pan with a lid.

Add soya sauce followed by 5 spice powder, garlic powder and salt to the chicken - bok choy mixture.

Stir well, close the lid and cook it again for 5 minutes in a medium flame.

Now add the chopped bok choy leaves and mix well.

Cook it for couple of minutes.

Move the chicken - bok choy mixture to the corner of the pan and add the eggs.

Scramble the eggs and combine it with the chicken - bok choy mixture.

Add pepper powder and stir well.

Once the stir fry becomes dry, remove from the flame and serve hot.



Serving Options :

Serve with hot rice or Fried rice.

Egg Rice Noodles Using 5 Spice Powder


Rice Noodles is a quick noodles which can be prepared in a jiffy. The noodles has to be soaked in a boiling water for couple of minutes and drained is further rinsed with a cold water to use in delicious soups and stir fried recipes. In my today's recipe, I have used simple egg noodles using rice noodles and 5 spice powder. The five spice powder is a mixture of five spices like star anise, cloves, cinnamon, pepper and fennel seeds which is also a very popular seasoning in Chinese cooking. Addition of this powder, enhances the taste of dish and also gives a delicious authentic taste. I have also added generous amount of spring onion leaves to give a yummy taste and flavor to the noodles.


Ingredients :

200 gms Rice Noodles / Rice Vermicelli ( I have used MAMA brand )
1 Tbsp Oil
1 Onion, sliced
1 Tbsp Garlic, finely chopped
4 Eggs ( 3 for preparing Noodles and 1 for Omelette )
2 Tbsp Spring onion bulb, finely chopped
1/4 Cup Spring Onion leaves, finely chopped
1 Tsp 5 Spice powder
1 Tsp Lemon grass powder
1 Tsp Red chilli paste
1 Tsp Soya sauce
Salt to taste

Method :

Cook rice noodles according to the packet instructions and keep aside or soak the noodles in a boiling water for 2 minutes and drain the water. Rinse and use the noodles.

Heat oil in a pan and add chopped garlic followed by onion slices and chopped spring onion bulb.

Saute till the onion turns translucent and add the eggs.

Scramble the eggs and add the rice noodles followed by five spice powder, lemon grass powder, red chilli paste, soya sauce and spring onion leaves.

Gently mix well, add salt and cook it for another 3 - 4 minutes.

Once the spices get blends well with the noodles, remove from the flame and transfer it to a bowl.

Break the egg to a pan and add little soya sauce, chilli paste and spring onion leaves on top of the egg.

Cook it for 3 minutes in a low flame and transfer it to a rice noodles bowl.

Serve hot.


Serving Options :

Serve with any Manchurian or Tomato sauce.

Egg Drop Ginger Soup


Egg drop ginger soup is a a flavourful and easy Chinese soup in which beaten egg is added in a chicken stock. The beaten egg is added like a thin stream at the final stage of cooking to the soup which in result gives a silky thread / strands like texture. Adding finely chopped ginger pieces to the soup gives a strong flavourful taste and also excellent for digestion and cold. Simple yet tasty and delicious soup to serve with a toast.


Ingredients :

1 Egg 
2 1/2 Cups Water
1 Tbsp Chicken powder 
2 Tbsp Ginger, Finely chopped 
3 Tbsp Spring Onion leaves, Finely chopped 
Salt to taste 
1/4 Tsp Pepper powder 
1 1/2 Tsp Cornflour 

Method :

Mix chicken powder in a measured amount of water and let it boil in a medium flame.

Add the chopped ginger pieces and boil it further for 3 minutes.

Meanwhile, mix cornflour with little water and keep aside.

Add spring onion leaves along with cornflour to the boiling ginger soup.

Let it boil in a medium flame till the soup gets thicken.

Break the egg and beat it with the fork.

Slowly drop the beaten egg to the soup and stir it vigorously using fork.

Add pepper powder and let it boil for couple of minutes.

As chicken powder contains salt, add salt after tasting the soup.

Once the egg gets cooked and soup gets its consistency, remove from the flame.

Serve hot.


Serving Options :

Serve hot with Toasted bread.

Chicken in Soya Sauce Gravy


Chicken in Soya sauce is an Indo-Chinese gravy in which chicken is marinated and cooked in soya sauce. This is a perfect side dish for fried rice and also can be served along with plain Basmati rice. To get a juicy chicken, shallow fry the marinated chicken till 3/4th and cook the remaining in gravy.
As soya sauce contains salt in it, be careful while adding extra salt in a gravy.


Ingredients :

To Marinate :

500 gms Chicken, Boneless, cut into cubes
1 Tsp Ginger-garlic paste
2 Tbsp Corn flour
1 1/2 Tbsp Soya sauce
1 Egg
1 Tsp Pepper powder 
Salt to taste
1 Tbsp Oil 

For Gravy :

2 Onions,chopped into cubes
1 Big Capsicum/ Bell pepper, chopped into cubes
5-6 Garlic pods,finely chopped
1/2 inch Ginger piece, finely chopped
10 Red chillies, dry 
1 Tbsp Soya sauce
1 Tsp Vinegar 
1 Tsp pepper powder
1 Cup Chicken stock 
1 Tsp Sugar
Salt to taste

For Garnish :

Finely chopped Spring onions

Method :

Marinate chicken with the above ingredients for half an hour.

Heat 5-6 Tbsp oil in a pan and shallow fry the marinated chicken.

Reserve the marinated juice.

While frying, turn both the sides and when chicken gets 3/4th cooked, remove from the flame and
keep aside.

Heat 1 Tbsp oil and add cubed onions.

Fry them for a minute or till it turns translucent.

Add finely chopped garlic followed by ginger and dry red chillies.

Saute for a minute and add bell pepper cubes followed by 3/4th cooked chicken. Mix well.

Add pepper powder followed by vinegar, sugar, salt, soya sauce and chicken stock.

Be careful while adding salt, as soya sauce contains salt in it.

Now add the reserved marinated juice and let it cook for 5 mins in a lower flame or till the gravy becomes thick.

Once done, remove from the flame and garnish with chopped spring onions.



Serving Options :

Serve hot with plain Basmati rice or Fried rice.

Egg Fried Rice & Foodpanda Experience !



Rainy days, not only brings out happiness it also brings out our laziness. Yeah ! It's pouring cats and dogs here and I am feeling very lazy especially to prepare dinner. And Power shut down added all the more reasons to order my dinner from Restaurant couple of days back. When it comes home delivery, I order food only from our nearby known restaurants and never tried any online food portals. But for the first time, I ordered food through Food Panda and overwhelmed with the response from the Team. There was just few steps to get registered and selected my place to search for my nearby Restaurants. Amazed to see Restaurants which has varieties of cuisines to be linked with food panda. With all my conflicts in choosing food, I ended up with Chinese and ordered Egg fried rice and Paneer Jalfrezi. Menu was listed like in a menu card and felt like sitting in a Restaurant. Final completion was with the code submission which I was supposed to get through phone and I did not receive it. But in a jiffy, got a call from Food Panda to apologize on their Technical issue and confirmed my order on behalf of me. After 10 minutes, received an another conference call from food panda with a Restaurant person to inform the unavailability of Paneer dish and took a replacement order. Finally got my confirmation mail from Foodpanda with a clear details of order. Amazing right !

Egg fried rice is a Chinese dish which is prepared with cooked rice and veggies along with egg or meat. Easy to prepare with leftover rice and tastes delicious. Leftover rice, which is cooked a day ahead is an excellent option for fried rice. Add oil to the cooked rice to avoid stickiness. It can be served with Tomato sauce, Chili sauce and any wet Manchurian. 

My food panda experience made me to try this yummy rice for my lunch ! Here is my style Egg Fried Rice !

 

Ingredients :

  • 2 Cups Basmati Rice, Cooked
  • 2 Eggs
  • 1 Tbsp Garlic, Finely chopped
  • 2 Tsp + 1/2 Tsp Soya Sauce
  • 1 Carrot, Finely chopped
  • 5 Shallots or Spring Onion bulb, Sliced (or use onions)
  • Salt to taste
  • 1/2 - 1 Tsp Pepper powder
  • 3 Tbsp Oil
  • Few Spring onion leaves, finely chopped
Method :
  • Cook rice on a previous day and refrigerate it.
  • Remove from refrigeration and add 1/2 Tbsp oil.
  • Mix well and keep aside.
  • Break eggs in a bowl and add 1/2 Tsp Soya sauce.
  • Beat well and keep aside.
  • Heat 1 Tbsp Oil and add the beaten eggs.
  • Scramble them and keep aside.
  • Add the remaining oil in a same pan and add the chopped garlic.
  • Saute and add shallots, saute for a minute in a medium flame.
  • Add finely chopped carrot and saute for couple of minutes.
  • Now add soya sauce followed by the cooked rice and mix well.
  • Add salt and pepper powder. Mix well and switch off the flame.
  • Garnish with finely chopped spring onion leaves and serve.





Serving Options :

Serve hot with Tomato sauce, Chilli sauce or any Manchurian gravy.




 Note :

  • Leftover rice is an excellent option for fried rice so that the rice does not stick to the pan.
  • If cooked rice, then spread it on a plate and refrigerate for an hour and then use it for cooking.
