Salami Omelette ( Indian Style )



Ingredients :

1 Cup Chicken Salami, chopped into small cubes
3 Eggs
1 Onion, finely chopped
1 Tomato, finely chopped
2 Green chillies, finely chopped
Salt to taste
1 Tbsp Oil

Method :

Heat oil in a pan and add chopped salami, saute for couple of minutes in a medium flame till it turns light crispy.
Remove and keep aside.
In a same pan, add onions and green chillies, saute for a minute or till it turns light brown.
Meanwhile, break eggs in a bowl and beat well.
Now add the sauted salami, onions, green chillies and salt. Mix well.
Heat pan and pour the egg mixture, add the chopped tomatoes.
Cook the omelette in a medium flame, slowly turn the other side and cook for a minute.
Remove from flame, once done.
Serve with Toasted bread and Fresh juice.

Bittergourd Chips / Pavakai Chips

I am not a big fan of bittergourd, infact I used to avoid this veggie before wedding. Later when I started cooking, surfed lots of health facts n nutritious values about this gourd and similar veggies and changed myself to eat all my " hated " veggies...This bitterguord chips always reminds me of my brother...who loves this chips very much....Whenever he goes to the bakery, he never comes back without buying this chips :) I used to give him weird stares those days but I was wrong... Bittergourd is really a very healthy veggie which has Vitamins, Iron, Calcium, Potassium, Magnesium, Folic acid, Zinc and is high on Dietary fiber. Nowadays I make sure to include this healthy veggie atleast once in a week in my diet (my husband still detests it though!!!).
Every year I used to gift my bro for Raksha Bandhan..but he has travelled overseas for his project so decided to prepare his fav recipes, this whole week and wish him a special Raksha Bandhan... atleast he can enjoi watching them on my blog ( I know that he will kill me after coming back, for eating all of his fav recipes n posting jus pics ;) )
Now to one of my brothers' favourite recipe,


Ingredients :

1 Bittergourd, medium sized
1 Tbsp Corn Flour
1 Tbsp Rice Flour
1 1/2 Tsp Chilli powder
1 Tsp Jeera Powder
Salt to taste
Oil for frying

Method :

Wash bittergourd and cut them in to very thin roundels.
Dry them in a tissue paper or kitchen towel.
Now mix Rice flour, corn flour, chilli powder, jeera powder, salt and bittergourd.
Sprinkle very little water and mix well.
Heat oil in a pan and drop them one by one and fry them in a batches ( Medium flame ).
Remove once they turn brown and crisp.
Serve with Sambhar or Curd Rice.

Brinjal Chutney



Ingredients :

2 Medium sized Brinjals, chopped
1 Tbsp Urad dal
3- 4 Dry red chillies
Small piece of Tamarind
Salt to taste
1 Tbsp Oil

For Tempering :

1/2 Tbsp Oil
1 Tsp Mustard Seeds
1 Tsp Urad dal
Few curry leaves
Pinch of Hing

Method :

Heat oil in a pan and add the chopped brinjals. Fry them for couple of minutes or till they turn brown color.
Remove and keep aside.
Next add the urad dal and roast them till the color changes. Remove and keep aside.
Now add the dry red chillies and roast them for a minute.
Mix everything along with tamarind and salt, grind to a smooth paste adding little water.
For Tempering, heat oil in a pan and add the mustard seeds, once they spluttering, add the urad dal followed by curry leaves and hing.
Add the tempering to the chutney and serve with dosa.

Lemon Rice With Roasted Cumin Flavor

No lunch boxes without lemon rice atleast once in a week during school n college days...I jus love this rice so sometimes i ask my mom to prepare this twice a week. This is my mom's style of preparation , adding roasted cumin to lemon rice always reminds me of my school days.. Even when I dry roast cumin for other recipes, the aroma reminds me of the flavour of lemon rice. Roasted or Fried Potatoes is a lovely combination for this but personally for me, with egg omelete the combo is divine!!!....Just an omelete is sufficient for me to enjoi my rice...I just love this combination...am already drooling with the thought of it ;)
Final garnish of crushed cumin gives a lovely aroma to the rice...and i love adding lots of nuts and dals for tempering to get the crunchiness in every bite..
So here's my mom's recipe... my way...


Ingredients :

2 Green chillies, chopped
2 Tbsp  Lemon juice
1 Tsp Channa dal
1 Tsp Urad dal
1/4 Cup Ground nuts
Few curry leaves
1 Cup Rice, cooked
1/4 Tsp Turmeric powder
1 1/2 Tsp Jeera / Cumin
Salt to taste
1 1/2 Tbsp Oil

Method :

Dry roast jeera / cumin in a pan and crush them coarsely. Keep aside.
Heat oil in a pan and add channa dal followed by urad dal and groundnuts.
Add the curry leaves, fry and add green chillies.
Now add the turmeric powder and salt.
Switch off the flame and add the lemon juice.
Add the cooked rice and mix well, taste and adjust salt.
Now add the roasted crushed cumin powder and mix well so that the aroma blends well.
Garnish with coriander leaves and serve with Potato fry or egg omelette.

Green Chutney


Ingredients :

1 Cup Pudina leaves
1 Cup Coriander leaves
1 Cup Curry leaves
4 -5 Green chillies
1/2 inch Ginger
Small piece of Tamarind
Salt to taste
1/2 Tbsp Oil

For Tempering :

1/2 Tbsp Oil (Gingelly or cooking oil )
1 Tsp Mustard seeds
1 Tsp Urad dal

Method :

Heat 1/2 Tbsp oil in a pan and add pudina, curry and coriander leaves, saute for a minute, remove and keep aside.
Then add the ginger, green chillies and tamarind , saute for a minute and remove.
Add everything in a mixie with salt and grind to a smooth paste using little water.
For tempering, heat 1/2 Tbsp oil in a pan and add mustard seeds, once they start spluttering, add the urad dal.
Now add tempering to the green chutney and serve with dosa or idly.

Squid / Calamari Kurma



Ingredients :

Section A:

500 gms Squid, cleaned and chopped
2  Onions, finely chopped
2 Tomatoes, finely chopped
1/2 Tbsp Ginger garlic paste
1/2 Tsp Turmeric powder
1 Tsp Garam masala
1/2 Tbsp Chilli powder
Salt to taste

Section B :

1 Tbsp Oil
1 Tsp Fennel seeds / Saunf
1/4 th Cup of Coconut
1 Tsp Poppy seeds

Method :

Wash, clean and chop the squid / calamari.
Add the section A ingredients in a pressure cooker with little water and cook for 3 whistle.
Once the pressure released in a cooker, remove and keep aside.
Heat oil in a pan or kadai and add the fennel seeds.
Now add the squid masala and mix well.
Meanwhile grind the coconut and poppy seeds to a fine paste using little water.
Add the coconut paste to the squid masala and cook for a minute.
Remove from flame, garnish with coriander leaves and serve hot with rice.

Choco Popcorn Rock

I am sure that everyone loves popcorn...movie's without popcorns??? No way !!! Enjoing the favourite movie with bowls of popcorns...that's lovely right?? But when made at home there is always some leftover popcorns losing its cruchiness in some time...True that the crispiness can be got back using microwave but wanted to try something new... And with chocolates, the only way to express our happiness or joy is by gifting chocolates to your loved one..When i am depressed or tensed, i used to eat chocolates and sometimes it helps me to come out of it :) So here I have mixed the leftover popcorns and the choco paste to form a yummy choco Popcorn rock!!!. I have named this coz this looked like rocks on freezing :) This was really yummy, you get the flavor of popcorn, nuts and choco... was really heaven for me..and that too when we make use of leftovers and prepare some yummy recipes...the happiness gets doubled:) I have used multi colored sugarballs and choco strands for the topping...


Ingredients :

50 gms Popcorn
100 gms Choco Paste ( I have used Marco choco paste )
1 Cup Nuts ( Raisins, Walnuts, Almonds, Cashews )
Multicolored Sugar Balls n Chocolate Strands for Decorating
Paper cups

Method :

Place choco paste in a microwave bowl and microwave it for 3  minutes.
Finely chop the raisins, walnuts, cashews and almonds.
Now add the chopped nuts to the melted choco paste and mix well.
Add the popcorns to the choco mixture and mix well.
Make sure that each popcorn gets coated with choco paste.
Slowly spoon in popcorn in to the paper cups and decorate with sugar balls and chocolate strands .
Freeze it and enjoi the Popcorn chocolate.

Pepper Mushroom



Ingredients :

200 gms Mushrooms
Handful of Curry leaves
4 Garlic pods, finely chopped
1 Onion, Sliced
3 Tsp Pepper
Pinch of Turmeric Powder
Salt to taste
1 Tbsp Oil

Method :

Clean and chop mushrooms.
Crush the pepper coarsely and keep aside.
Heat oil in a pan and add the curry leaves, fry them and add the chopped garlic.
Fry them for a minute and add the sliced onion.
Fry till the color changes to light brown.
Now add the turmeric powder, salt and crushed pepper. Mix well and add the chopped mushrooms.
Sprinkle little water and cook for 3 minutes or until the mixture becomes dry.
Cook in a medium flame.
Remove from flame and serve hot Sambhar rice, Rasam rice or Curd rice.

Spinach n Corn Pasta



Spinach and Corn make an awesome combination. This yummy combination always reminds me of "Coffee day" and "Barsita"  where they serve corn 'n spinach sandwich...Whenever we step in , my husband makes sure that he orders this before peeping into the menu ;) Actually planned to prepare sandwiches for breakfast today... but the climate (slight drizzle outside... cozy inside...) made me so lazzzzy and I woke up late for it...so prepared just a toast n nutella in a hurry at the last moment for him... Finally spinach n corn savoured in white sauce along with pasta was our lunch.... Was yummy and full tummy!!!

Ingredients :

2 Cups Pasta ( I have used Fuselli )
2 Cups Milk
4 Tbsp Flour
4 Tbsp Butter
1/2 Tsp Salt
1 Tsp Dried herbs
1 Cup Spinach ( Blanched n chopped )
1/2 Cup Corn ( Fresh or Frozen )

Method :

Blanch Spinach leaves and Chop them. Keep aside.
Cook pasta according to the instructions and keep aside.
Melt butter in a pan and add the flour. Stir well along with salt and add milk.
Stir continously to avoid lumps. Cook and stir over low flame until the sauce gets thickened.
Now add the dried herbs. Mix well.
Add the corn and cook for a minute, followed by chopped spinach.
Add the pasta and stir well.
Switch off the flame and serve hot.

Spanish Omelette

This recipe is adapted from one of my fav cookery show in ndtv goodtimes..I made a twist by adding frozen corns and dried herbs. This is a perfect healthy n filling breakfast with a glass of fresh juice.



Ingredients :

4 eggs
1/2 Tbsp Dried herbs (I have used mixture of Oregano, Thyme and Basil)
Salt to taste
1 Tsp Pepper powder
1 Big Onion, sliced
3 Potatoes, sliced
1 Cup Frozen Corns ( Fresh corns can also be used)
2 Tbsp Olive oil

Method :

Break eggs and add dried herbs, salt and pepper. Beat well with fork and keep aside.


Heat oil in a pan ( non stick) and add the sliced onions, fry them for couple of minutes and add the
potatoes.




Simmer and cook for 2 minutes.
Now add the frozen corn and cook for another couple of minutes.

                                        

Remove from flame and mix it with the egg mixture.

Heat the pan again and simmer it, pour the egg mixture and cook for couple of minutes.

Now place the plate on the pan and slowly turn the pan upside down. ( Be careful at this stage)





Slowly place the egg omelette back to the pan wihout shaking and cook for another couple of minutes.
Cook in low flame.


Now remove from flame and serve with fresh juice.

Methi Dal

Ingredients :

1  Cup Toor dal
1/2 Cup Fresh Methi / Fenugreek Leaves
1 Onion, Finely chopped
2 Green chillies, Sliced
1 Tsp Turmeric powder
1 Tsp Jeera
Lemon Juice from Half Lemon
Salt to taste
1 Tbsp Oil

Method :

Cook toor dal separately and mash it.
Heat oil in a pan and add the jeera, followed by chopped onion.
Fry them for a minute and add the green chillies.
Add the turmeric powder and salt.
Now add the methi / fenugreek leaves and saute well.
Add the cooked toor dal and mix well.
Cook it  for 2-3 minutes and remove from flame.
Now add the lemon juice and mix well.
Serve with hot rice and ghee or roti / chapathi.

Easy Bacon Sandwich

Ingredients :

6 Sandwich Bread
3 Bacon, Finely chopped
1 Capsicum, Finely chopped
2 Eggs
1/2 Cup Mayonnaise
Salt to taste
1/4 Tbsp Olive oil

Method :

Heat oil in a pan and add the chopped bacon.
Fry them for 2-3 minutes and add the capsicum.
Fry them for again couple of minutes and add the eggs and little salt, scramble and cook them.
Once done, turn off the flame and let it cool.
Take mayonnaise and mix it in the bacon mixture.
Fill the mixture in sandwich bread and Grill them.
Serve hot with  French fries and Tomato Sauce.

Methi Vadai Curry / Vendhaya keerai vadai curry





Ingredients :

For Vadai :

1 Cup Fresh Methi leaves / Fenugreek leaves, chopped
1 1/2 Cup Channa Dal
1 Big Onion, Finely chopped
3 Green chillies, finely chopped
1/2 Tbsp Saunf
Salt to taste
Oil for frying

For Curry :

2 Tbsp Oil
1 Bay leaf
1 Tsp Saunf
2 Onions, Finely chopped
1 Big Tomato, finely chopped
1/2 Tbsp Ginger Garlic Paste
1 Tsp Garam Masala
1 Tsp Turmeric powder
1 Tbsp Chilli - Coriander powder
1/2 Cup Coconut paste
Salt to taste

Method :

Soak channa dal for 2 to 3 hrs.
Wash and grind coarsely. Add onion, green chillies, methi, saunf and salt to the channa dal.
Mix well, prepare like vadai and deep fry in a oil.
Remove and keep aside.


Heat 2 Tbsp oil in a kadai and add the bay leaf and saunf.
Add the chopped onions and fry till translucent.
Now add the ginger garlic paste followed by chopped tomatoes.
Cook till tomatoes turns mushy.
Add  the Turmeric powder, Garam masala, chilli- coriander powder and salt.
Mix well for a minute.
Meanwhile crumble the vadai and keep aside.
Add the crumbled vadai to the onion masala and mix well.
Add little water and cook for 3 minutes in medium flame.
Now add the coconut paste and mix well. Adjust salt and water, cook for another 2 minutes.
Once done, Garnish with coriander leaves and serve with hot idlis.

Sausage n Capsicum Masala Gravy - Indian Style

Ingredients :

3 Chicken Sausage, Chopped
1 Cup Capsicum, chopped
1 Big Onion, finely chopped
1 Tomato, finely chopped
1/2 Tbsp ginger Garlic paste
1 /2 Tbsp Chicken Masala powder
1/2 Tbsp Chilli powder
Salt to taste
1 Tbsp Oil

Method :

Heat oil in a kadai and add the chopped onion, fry them for 2 minutes and add ginger - garlic paste.
Fry them for an another minute and add the chopped tomato.
Now add the chilli powder, chicken masala powder and salt.
Add capsicum and Saute well.
Add the chopped Sausage and saute for a minute. Now add little water and cook for 2-3 Minutes.
Garnish with coriander leaves and serve with roti/chapathi.

Wheat Rawa Kanji Using Fenugreek Leaves / Wheat Rawa Porridge

Ingredients :

1 Cup Wheat Rawa
1 Tbsp Urad dal
2 1/2 Cup Water
1/2 Cup Fenugreek leaves, chopped
1 Tsp Mustard seeds
1 Tsp Jeera
1 Green chilli, finely chopped
1/2 Tbsp Ginger, Finely chopped
1 Cup Buttermilk
A Pinch of hing/Perungayam powder
Salt to taste
1/2 Tbsp Oil

Method:

Add wheat rawa and urad dal along with water in a cooker.
Cook for 4-5 whistles and turn off the flame.
Heat oil in a kadai or small pan and add the mustard seeds, once start spluttering add the jeera.
Now add the green chillies and ginger, saute well.
Add the chopped fenugreek leaves and sprinkle little water. Simmer and cook for a minute.
Now add this fenugreek to the cooked wheat rawa.
Add salt and buttermilk. Mix well and serve.
