Pudina Rice


Ingredients:

1 bunch pudina leaves
3 green chillies, chopped
1 onion, finely chopped
1 tsp ginger garlic paste
2 tbsp urad dal
1/2 tsp mustard seeds
1 cup cooked rice
Salt
Curry leaves

Method:

Saute pudina and urad dal separately and  grind together with little water.
Pour oil in kadai and add mustard seeds and curry leaves. Then add onion, saute for few minutes and add ginger garlic paste.
Later add green chillies. Saute for 2 minutes and add pudina paste, add some salt and saute nicely, until water evaporates.
Now add cooked rice and mix properly.
Serve hot with raita....

Crab Rasam


Ingredients:

5 crabs, cleaned and cut into pieces
1/2 inch cinnamon
2 cloves
1/2 tsp saunf
2 green chillies, chopped
1 tbsp ginger garlic paste
1 cup onions, chopped
1/2 cup tomatoes, chopped
1 tsp turmeric powder
1 tbsp wheat flour
1 tbsp pepper powder
Salt
Few drops of lemon juice
Curry leaves and Coriander leaves

Method:

Pour oil in kadai. Add Cinnamon, saunf and cloves, fry and then add green chillies. Saute for 1 min and then add chopped onions, fry for few minutes and add ginger garlic paste.
Add few curry leaves abd chopped tomatoes.
Then Turmeric powder and crabs. Mix properly and close it for 2 mins.
Later add pepper powder, salt and water. Sprinkle some wheat flour to become thick.
let it cook for few minutes...and then add lemon juice.
Garnish with coriander leaves and serve hot with rice.....

Crispy Prawns

Ingredients:

1 cup, Prawns
1 tbsp Maida
1 tbsp Rice flour
1 tbsp Corn flour
1 tsp Ginger garlic paste
1 tsp Pepper powder
1/2 tsp Chilli powder
Salt
Oil for frying


Method:
Mix all ingredients and marinate for 30 mins.
Then deep fry in oil and serve hot with sauce...

You can add egg too...Same recipe can be used in pizza....

Egg Curry

Ingrediants:

5 eggs hard boiled, chopped into cubes
3 tsp coriander powder
1tsp jeera powder
1 tsp saunf powder
2 tsp chilli powder
1 tsp ginger garlic paste
1/2 tsp methi seeds
1/2 tsp saunf
small piece of cinnamon stick
3 onions, paste
2 tomatoes, paste
1 cup coconut milk
1 tsp lemon juice
chopped coriander for garnishing
salt to taste

Method:
Boil eggs and chop into cubes.
Prepare spice paste using coriander powder, saunf powder, chilli powder, jeera powder, ginger garlic paste with water.
Heat oil in kadai and add methi, saunf and cinnamon. Then add onion paste, cook until golden brown.
Add spice paste and little water, cook for 5 mins.
Then add tomato paste, stir in for 3 mins and pour somemore water. Let it boil for 15 mins.
Add coconut milk and cook for 1 min.
Then add lemon juice and chopped eggs....Garnish with coriander leaves or pudina leaves.
Serve hot with rice.....

Avarakai Curry


Ingredients:
1 cup chopped Avarakai / Broad beans
2 onions, finely chopped
3 tomatoes, finely chopped
1 tsp ginger garlic paste
1 1/2 tbsp chilli coriander powder
a pinch of turmeric powder
Salt to taste
Oil(add more quantity compared to other curry)

Method:

Add oil in kadai and add finely chopped onions. Saute nicely and add ginger garlic paste.
Later add tomatoes and saute for few minutes or until tomatoes get mashed. Then add broad beans, chilli coriander powder, turmeric powder and salt.
Add some water and cook for 10 minutes or until oil separates from the curry.

Garnish with curry leaves and serve hot with chapathi or rice.

Palak Paneer

Ingredients :
1 packet paneer, cut into cubes
1 bunch Spinach, stem removed
1 onion, finely chopped
1 tomato, make paste of it
5 green chillies
200 gms butter
1 tsp garam masala
Salt to taste

Method:
Saute spinach and green chillies together with 1 tsp of oil . Remove, cool and grind into paste.
Pour some butter in kadai and chopped onion, saute nicely until it become translucent and then add tomato paste.
 Later spinach and green chilli paste, add garam masala and salt. Let it cook for few minutes.
Mean while saute paneer cubes in butter and keep aside.
Then add fried paneer in spinach curry....let it coil for 2 mins and add some more butter to get the taste of palak panner.
Serve hot with roti and naan.....

Goan Chicken Curry


Ingrediants :

350 gm chicken pieces
1 onion, finely chopped
1 tomato, finely chopped
2 cup coconut milk
Salt to taste

Paste:

 1/4 cup grated coconut

7 dry red chillies
1 tsp jeera
1/2 tsp coriander seeds
a pinch of turmeric powder
1 tbsp tamarind, soaked
1 tbsp ginger and garlic paste

Preparation:

Mix chicken with 1 tbsp oil and grill for 10 minutes. Later cool and shred some pieces and keep aside.
Grind coconut, red chillies, coriander seeds, turmeric powder, tamarind, ginger garlic paste....and keep this paste aside.
Add oil in non stick pan and add onion. Saute nicely and then add tomato.
Later add prepared coconut paste and saute nicely for 10 mins or until coriander flavour goes.
Add coconut milk and stir it properly.Cook for 5 min and then add chicken.....
Add some more water for consistency....Then cook for 10 mins and finely garnish with coriander leaves and serve hot with rice.

Potato Capsicum Fry

Ingrediants:

2 finely chopped onions
1 tbsp ginger garlic paste
3 boiled potatoes cut in cubes
1 capsicum cut in cubes
Salt
Oil
1 pinch Turmeric powder
2 tbsp chilli and coriander powder
1 tsp garam masala

Method:

Pour oil in kadai and add finely chopped onions. Saute for few min and then add ginger garlic paste.
Saute nicely and add turmeric powder, chilli and coriander powder, garam masala and salt.
Add potatoes and capsicum, then add water and cook for few min or till it turns gravy.
Later add some more oil and saute nicely until it becomes semi dry.
Serve with lemon rice or coconut rice.

Chicken Bread Foujiya


Ingrediants:

Left over chicken fry 4 pieces shredded
4 bread slices chopped
1 onion, finely chopped
3 green chillies, finely chopped
coriander leaves, finely chopped
2 eggs
Salt
2 tbsp oil
1 tbsp pepper powder

Preparation :

Add oil in kadai and add chopped onions, saute for few min and then add green chillies.
saute till onion turns light brown, then add eggs and scramble for few min, later add shredded chicken pieces.
Add salt, pepper powder, chopped bread...
Mix properly and keep in simmer for 2-3 mins.
Garnish with coriander leaves and serve hot with raita.

Egg Bellpepper Rice















Ingrediants :

Rice(cooked) 2 cup
3 eggs
1 tbsp pepper powder
2 tsp worcestershire Sauce
1 small bellpepper sliced
Salt
2 tbsp Oil

Preparations :
Keep kadai and add oil, then add eggs and scramble for few min.
Later add bell peppers, saute for 1 min and add worcestershire sauce, pepper, salt.
Then add rice and keep in simmer for 3 min.
Serve hot with tomato or chilli sauce.

Capsicum Curry



This is one of the easiest and tasty curry prepared using green bell peppers / Capsicum. The onions along with tomato and green chillies are sautéed and ground into fine paste to give a gravy consistency. And finally, the sautéed capsicum pieces are added and further cooked to get a delicious curry. This curry goes well with Roti, Phulka or Paratha.

Ingredients:

4 Tbsp Oil 
2 Capsicum / Green Bell pepper, Chopped 
2 Onions, Chopped 
1 Big Tomato, Chopped 
3 Green chillies, Chopped 
1 Tsp Ginger Garlic paste 
1/2 Tsp Red chilli powder 
1/2 Tsp Coriander powder 
1/4 Tsp Turmeric powder 
1/4 Tsp Garam masala 
Salt to taste

Method :

Saute chopped capsicum in 2 Tbsp oil until it becomes half cooked and remove from the pan. Keep aside.

Add 1 tbsp oil to the same pan and add onions followed by ginger garlic paste.

Saute till the raw smell of ginger garlic goes off and add green chillies followed by tomato.

Saute till the tomato turns soft and remove from the flame.

Cool and grind the onion - tomato mixture into fine paste by adding little water.

Now add the remaining oil to the pan and add red chilli powder followed by turmeric powder, coriander powder and garam masala. ( Do not burn the masala powder ).

Add the ground paste along with the required amount of salt and cook till the oil gets separates from the gravy.

Now add the sautéed capsicum and cook for another couple of minutes.

Garnish with coriander leaves and remove from the flame.

Serve.


Serving Options :

Serve with Roti or Paratha.

Carrot chapati

Ingrediants:
1 cup wheat flour
2 tbsp besan flour
3 finely chopped green chillies
1 long carrot grated
Finely chopped coriander leaves
1 tsp ajwain(optional)
Salt for taste

Preparation:
Mix all ingrediants and make a soft dough.
Divide dough into small balls and prepare like chapati.
serve hot with curd.

Ice Tea

Ingrediants:
1 tea bag
2 lemon
6 tbsp sugar

Preparation:
Boil water and remove from flame.
Add tea bag, sugar and lemon juice in hot water. After 1 min remove tea bag.
Refrigerate drink for half an hour.
Fill long glass with ice cubes and add refrigerated drink......
serve chill.
you can add mint leaves too for flavour.

Fried Potatoes


Ingredients :
5 Fresh green chillies, finely chopped and crushed
1 onion, finely chopped
5 potatoes cut in cubes
1 tsp dry oregano
4 tbsp vegetable oil
1/2 cup grated cheese

Preparations:
Heat half the oil in the pan and add onions and stir fry for 3to 4 mins.
Add potato cubes and stir to coat cubes in oil. Cover and cook for 15 mins or until potatoes are tender.
Shake the pan occasionaly to prevent sticking.
When the potatoes are tender push them to the side of frying pan and add the remaining oil.
When the oil is hot spread out the potatoes and add chopped, crushed green chillies.
Cook for 1o min so that potatoes turn golden brown all over.
Add dry oregano and grated cheese.
Mix gently and serve hot.

Steamed vegetable balls

Ingrediants :
1 cup finely chopped onions
1 cup finely chopped potatoes
1 cup finely chopped cauliflower
1 cup grated carrot
4 finely chopped green chillies
chopped coriander leaves for garnishing
salt
1 tsp garam masala

Dough:
2 cup maida
salt
water
oil

Preparations:
Prepare dough with maida,salt,oil and water and keep seperately.
Pour oil in kadai and add finely chopped onions. Saute for few mins and add green chillies.
Later add potato, saute for while and add cauliflower. After 2 min add grated carrot..
Add salt and close it for 5 min. Later add garam masala and add some water to cook.
Mixture should become dry.garnish with coriander leaves and let it cool.
Mean time prepare small balls from dough and roll it like small poori.
Stuff the above mixture and prepare like balls...
steam for 5 min and serve hot with tomato ketchup......

Sirukeerai Adai


Ingrediants :

1 Fistful Channa dal

1 Fistful toor dal

1 Fistful raw rice

4 tsp urad dal

1 Cup chopped sirukeerai

salt

3 finely chopped green chilles

1 tbsp red chilli flakes

Water


Preparations :

Soak first four ingrediants for 1 1/2 hrs and grind it coarsely.

Add remaining ingrediants with water and make it as a thick batter.

Heat pan and prepare like adai in medium fame.

Serve hot with coconut chutney or sambhar.


You can innovative by adding onions,grated carrot etc....

Pasta Vegetable Soup

Ingrediants :
1 cup cooked pasta
1 cup finely chopped carrot
1 cup finely chopped beans
1 cup finely chopped cabbage
1 cup finely chopped capsicum
pepper
salt
2 tbsp cornflour
2 maggie chicken cubes

Preparation :
Cook carrot, beans, capsicum, cabbage until soft or keep in pressure cooker for 5 whistle and mash it.
Add chicken cubes, salt, cooked pasta and pepper.
Mix corn flour with half cup water and add to the mixture.
Boil it for 10 min and serve hot.

Channa Flour Dosa

Ingrediants :
2 cup channa flour
1 finely chopped onions
3 finely chopped green chillies
1 cup grated carrot
chopped coriander leaves
water
salt for taste

Preparation :
Saute chopped onions and green chilles for 2 min.
Mix channa flour,salt,sauted onions,greenchillies,grated carrot,coriander leaves and water...
Prepare like dosa and serve hot with mint chutney.
