Cheesy Haleem Toast


If you are in Hyderabad, Haleem is a must try dish during Ramadan season. Haleem is a delicious dish prepared using meat, wheat and spices along with a generous amount of ghee. It is usually served with lemon wedges and fried onions. A small bowl of Haleem will make your tummy full and gives an instant energy. Lots of vendors are famous here in selling Haleem in their unique flavour but my personal preferences are Pista house and Shah ghouse haleem. Every year, my leftover Haleem turns into Haleem Egg Dosa for breakfast and this year, tried an interesting cheesy toast using Shah ghouse Haleem. No doubt that as such the haleem gives a delicious rich taste but the richness got enhanced, when it was served as a toast along with Mozzarella cheese. This toast can be served as a breakfast or starter or evening snack along with Tomato sauce. Adjust the quantity of cheese and haleem according to your taste bud and being generous on both the ingredients will make your toast heavenly for sure :)


Ingredients :

2 Cups Haleem 
4 Bread slices 
2 Cups Mozzarella cheese, grated 
1/2 Cup Cheese, grated ( I have used Amul cheese cube in this recipe ) 
Chilli flakes 

Method :

Sprinkle mozzarella cheese evenly on top of bread slice and place it on a hot tawa. 

Simmer the flame and cook it for a minute or till the cheese starts melting. 

Using butter knife, spread the cheese all over the slice and top it with Haleem. 

Sprinkle grated cheese on top of the haleem followed by red chilli flakes. 

Toast it in a low flame till the base of bread slice turns crispy. 

Once done, remove from the flame and repeat the process for the remaining slices. 

Serve hot. 


Serving Option :

Serve with Tomato sauce.

Tawa Toasted Besan Bread


This is a healthy version of a Bread bajji in which the besan batter dipped bread slices are toasted on a tawa with a less oil instead of deep frying. Green chilli and coriander leaves are made into fine paste and added to the besan flour is further made into batter by adding water. Then, the bread slices are dipped in the besan batter and toasted on the tawa with a minimal oil. This is a perfect evening snack for kids and also can be served as breakfast along with Mint chutney. Variations can be done in this recipe by adding grated carrots, beetroots etc which in addition also makes the toast more healthy. To make it more spicy, increase the addition of chilli or add 1/2 tsp of red chilli powder to the recipe.


Ingredients :

6 - 7 Bread slices 
1 Cup Besan flour 
1 Green chilly, chopped 
1/4 Cup Coriander leaves, chopped 
Less than 1/4 Tsp Turmeric powder 
Less than 1/4 Tsp Hing powder 
Salt to taste 
3/4 - 1 Cup Water 

Method :

Cut the bread slices diagonally and keep aside.

Grind green chilli into fine paste by coriander leaves, turmeric powder and hing powder along with it.

Take besan flour in a bowl and add the ground paste.

Add the required amount of salt and add water little by little to prepare a batter.

Prepare a batter without any lumps and the consistency should be like a Dosa batter ( not too thick nor watery ).

Heat a non stick tawa and brush it with little oil.

Now take a slice of bread, dip it in the batter and place it on the tawa.

Smear little oil and cook both the sides in a medium flame.

Repeat the process for the remaining bread slices.

Once done, remove from the flame and serve hot.


Serving Options :

Serve hot with Mint Chutney.

Vegetable Cheese Sandwich Using Spinach - Mint Chutney


This delicious, juicy and tasty sandwich when served with a glass of fresh juice will make your tummy full and also gives a feeling of satisfied meal. This can be served as breakfast or evening snack. I have used single cheese slice in each sandwich and if you are a cheese lover, include one more slice to enjoy the cheesy heavenly taste.

Ingredients :

10 Sandwich bread slices 
5 Cheese slices ( I have used amul brand )
2 Big Onions, Finely chopped
2 Big Tomatoes, Finely chopped
3 Green chillies, Finely chopped ( adjust according to taste bud )
Olive oil or Butter for grilling

For Spinach - Mint Chutney :

1 Cup Mint leaves
1/2 Cup Spinach leaves
1 Cup Coriander leaves
2 Green chillies
1 Tsp Lemon juice
Salt to taste
1 Sandwich bread slice
water, as needed

Method :

Grind the given ingredients in the list "For Spinach - Mint Chutney" into fine paste by adding required amount of water.

The consistency of the chutney should be thick and smooth. ( so, add very little water ).

Once done, transfer it to a bowl and keep aside.

Take one slice of bread and evenly spread the spinach - mint chutney on it.

Spread the chopped onions on top of the chutney followed by chopped tomatoes and chillies.

Place one cheese slice on top of the onion mixture.

Take one more bread slice and evenly spread the spinach - mint chutney.

Place the chutney side on top of the cheese stuffed bread and place it on a grill pan.

Brush little olive oil or butter on both the sides of the sandwich and using potato masher, gently press the sandwich so that the stuffing will not come out.

Cook the sandwich both the sides till it turns crispy and brown.

Once done, remove from the grill pan and repeat the process for the remaining bread slices.

Serve hot.





Serving Options :

Serve it with Tomato Sauce.



Note : Instead of grill pan, this can also be prepared using bread toaster.

Mint & Walnut Pesto Sandwich


Pesto is a blend of herb, olive oil, cheese and nuts which is widely used in pasta recipes and in addition, pesto sauce can also be served as a dip or spread. Though the basic pesto requires fresh basil leaves, I have used mint and cilantro along with walnuts to get a flavorful creamy spread for my sandwich. This is a very simple and tasty sandwich which is stuffed only with the flavorful pesto sauce. This is also a perfect breakfast meal as this can be whizzed up in 10 - 15 minutes according to our taste bud in busy mornings. Variations can be made by including veggies to get delicious pesto veggie sandwich.






Ingredients :

1 1/2 Cups Mint leaves
1 Cup Cilantro leaves
4 Garlic pods, peeled
3 Tbsp Walnuts, crushed
1/2 Cup Cheese, grated 
5 Tbsp Olive oil 
Salt to taste 
Bread Slices for sandwich ( I have used whole wheat bread slices in this recipe ) 

Method :

Add mint leaves along with cilantro, garlic pods and walnuts in a food processor or mixer grinder.

Blend it and add the olive oil.

Blend till the mixture turns into smooth paste.

Add the grated cheese and blend again.

Once the pesto gets a smooth and creamy texture, transfer it to a bowl and keep aside.

Take one bread slice, spread butter on one side of the bread and place it on the non stick grill tawa.

Gently spread the mint - walnut pesto sauce on top of it and place another bread slice on it.

Brush little butter on top of the bread slice.

Flip the other side and grill it till both the sides of slices turns golden brown color.

Once done, remove from the tawa and repeat the process for the remaining slices.

Serve hot.





Serving Options :

Serve hot with any fresh juice.

Tofu & Olives Savory Muffin / Diet Friendly Reicpe - 74 / #100dietrecipes


Are you bored of regular diet recipes, then give a break to that and munch couple of these savory muffins for breakfast and feel guilt free. These muffins are completely healthy as it is prepared using wheat flour, oats and tofu. In addition to this, these are butter free muffins as I have used only olive oil in this recipe. Yummy and tasty muffins can be served with Tomato sauce or little low fat mayo ( not too much ;) )


Ingredients :

1 Cup Wheat Flour
1/2 Cups Oats
2 Tsp Baking Powder
1/2 Tsp Salt
3/4 Cup Tofu, Finely grated
1/2 Tsp Oregano, dried
2 Tsp Red chilli flakes
6 Black olives, finely chopped 
3/4 Cup Milk
2 Tbsp Olive oil
1 Egg

Method :

Mix all the dry ingredients ( wheat flour, oats, grated tofu, chilli flakes, oregano, baking powder, olives and salt ) in a large bowl.

Break egg in a small bowl and beat lightly.

Add milk and olive oil  to the beaten egg and mix well.

Now add the wet ingredients to the dry ingredients and gently mix it to get a thick batter.

Line the muffin tray with muffin cups and fill it with 3/4th of batter.

Bake it for 25 - 30 minutes at 180 degree C in a pre - heated oven.

Bake till the top layer of the muffins turns light brown color.

Once done, remove from the oven and cool it completely.

Serve.





Serving Options :

Serve it with Tomato sauce or honey mustard or low fat mayo.

Methi Ragi Toast / Diet Friendly Recipe - 50 / #100dietrecipes






Delicious and healthy snack prepared using wheat bread, Ragi flour and Methi leaves. This is an excellent option for evening snack or can also be served as breakfast as it is healthy and makes tummy filling. This goes yummy with Mint chutney or Coriander chutney.

Ingredients :

4 Bread slices ( I have used whole wheat bread )
1 Cup Ragi Flour
1 Big Onion, Finely chopped
4 Green chillies, Finely chopped
1/2 Cup Methi / Fenugreek leaves, Finely chopped
Salt to taste
3/4 Cup Water 

Method :

Cut the bread slices diagonally and keep aside.

Add ragi flour in a bowl along with onion, methi leaves, green chillies and required amount of salt.

Add water little by little and prepare a batter ( not very thin or thick ).

Heat non stick tawa and brush little olive oil on it.

Take one diagonal bread slice and dip it in the ragi batter.

Place it on the tawa and repeat the process for 2 diagonal slices ( depends upon the tawa size ).

Simmer the flame and cook both the sides for about 5 minutes.

Smear little olive oil, if necessary.

Once both the sides gets cooked, repeat the process for the remaining slices.

Serve hot.





Serving Options :

Serve hot with mint chutney.

Horse gram - Spring Onion Leaves Paratha / Diet Friendly Recipe - 43 / #100dietrecipes


Spicy and flavorful roti using horse gram and spring onion leaves is an excellent option to serve for any meal of the day along with low fat curd raita or diet friendly curry or kurma. Check out my diet friendly series to get more options for side dish varieties. The finely chopped spring onion leaves and red chilli are added along with pav bhajji masala to the flour and combined well to form a smooth dough. Rest the dough for sometime, so that the flavors blends well with the roti. I have used fresh red chilli in this recipe which can also be substituted with the regular green ones but adjust spicy level according to taste bud.


Ingredients :

1 Cup Wheat Flour 
1/2 Cup Horse gram flour 
1/2 Cup Spring onion leaves, finely chopped
1 Fresh red chilli, Finely chopped ( Green chilli can also be used ) 
Less than 1/4 Tsp Turmeric powder
3/4 Tsp Pav bhajji masala 
Salt to taste 
1 Tsp Olive oil 
1/2 - 3/4 Cup Water ( Adjust accordingly )

Method :

Take wheat flour in a large bowl along with horsegram flour, turmeric powder, pav bhajji masala powder, finely chopped spring onion leaves, salt and finely chopped red chilli.

Add water little by little to the flour and combine together to form a dough.

Add olive oil and knead well to get a smooth dough.

Cover it and keep aside for 15 - 30 minutes.

Divide the dough into 5 - 6 equal sized balls.

Take one ball and roll it into roti shape using rolling pin.

Heat tawa ( use non stick to reduce oil ) and place the rolled roti on it.

Cook on both the sides by brushing very little oil and remove from the flame.

Repeat the process for the remaining dough and serve hot.


Serving Options :

Serve hot with raita or kurma.

Whole wheat bread Dosa / Diet - Friendly recipes - 4 / #100dietrecipes



Whole wheat bread dosa is an instant dosa prepared using whole wheat bread, Ragi flour and Bansi Rava. The first thing, we follow in dieting is switching from white bread to brown bread and include more sandwiches or toast in our meal. To avoid the monotonous way of having bread, try this delicious and healthy dosa, which helps to reduce weight and also gives us a happiness of eating yummy breakfast / dinner. To make it more healthier, serve this tasty dosa with Mixed vegetable chutney. The same recipe can be prepared using any type of bread and if Bansi rava is not available, try it out with regular Rava or Wheat rava.


Ingredients :

4 Whole Wheat Bread
1 Cup Ragi Flour
1/2 Cup Bansi Rava
1 Cup Curd
Salt to taste
Water as needed

Method :

Chop the bread slices, add it to the mixie jar and give it a pulse to crumble it.

Now add the remaining ingredients ( Ragi, Bansi Rava and Curd ) to the bread crumbs and grind it to fine batter by adding water little by little.

Once done, remove and transfer it to the bowl.

Add salt and mix well.

Take one ladle of batter and prepare it like the regular dosa using non-stick dosa pan. ( Use nonstick to reduce the usage of oil ).

Flip the other side and cook it both the sides.

Remove from the flame and repeat the process for the remaining batter.

Serve hot.


Serving Options :

Serve hot with vegetable chutney or any chutney.

Avocado & Olives Toast


Avocados always brings back our memories of 8 years back old trip to Mettupalayam along with friends. And that's where, I tasted my first Avocado dish, which was creamy and delicious soup and of course, I still remember the taste of it.. From then, Avocados were my favorite and only couple of days back, I realized that my blog has only one Avocado recipe. So stay tuned...will be posting more :)

My Today's recipe is a simple and tasty toast using my favorite ingredient. This recipe is quite easy to prepare for breakfast or snack. The mashed Avocado blends with olives, pomegranate and few more ingredients to make a creamy and yummy spread. In this recipe, I have used one ripe Avocado in which 7 medium toasts can be prepared. To make it more healthy, I have used whole wheat breads which can also be substituted with the regular ones.. The taste of olives and sweetness of pomegranate gives a unique and delicious taste. The same recipe can also be prepared as sandwich, instead of open toast.



Ingredients :

1 Ripe Avocado
7 Black Olives, sliced
1/2 Tsp Chilli flakes
1 1/2 Olive oil
3 Tbsp Pomegranate fresh seeds
Salt to taste
Cheese powder to sprinkle ( optional )
7 Bread slices ( I have used whole wheat bread in this recipe )

Method :

Cut the avocado into half and scoop out the flesh.

Transfer into a small bowl and mash it using fork.

Now add the chopped olives, chilli flakes, Pomegranate seeds, salt and  olive oil.

Blend well and keep aside.

Heat tawa or grill pan and toast the bread for a minute on both the sides.

Spread the mashed Avocado on top of the bread and sprinkle cheese powder.

Toast it for couple of minutes in a low flame or until the bread turns crispy and remove from the flame.

Repeat the process for the remaining bread slices.

Serve hot.

Serve hot with Tomato sauce.

Faluche Du Nord

Faluche is a traditional bread in the Nord- Northern region of France. It is usually flat in shape and soft with white crust on top which is used for making sandwiches. It can also be served with butter and Jam or Nutella.
Learned this recipe from Jan month Home Bakers Challenge  but got an opportunity to try these yummy breads only yesterday. All these days, I never knew that adding only salt to the yeast, slow downs the process. I was worried when the dough did not rise in an expected time but after reading few reviews about yeast, I waited for another couple of hours and it worked perfectly. So approx. it took 4 hours for my dough to rise and patience is more important while working with yeast :)


Ingredients:

  • 2+1/4 cups All purpose flour
  • 1/2 cup Water
  • 1/2 tsp Salt
  • 1 tsp Active Dry yeast
  • 2 tbsp Olive oil
  • Extra flour for dusting & rolling
  • 1 tsp Oil (for brushing the top)


Method :

  • Mix yeast and salt in a Luke warm water and keep it aside for 5-7 minutes or until it turns frothy.
  • Add flour in a large bowl and add the yeast mixture slowly along with olive oil.
  • Knead everything to a smooth and soft dough.
  • Transfer the dough to a greased bowl and let it sit it for 1 and 1/2 hours.
  • Remove the dough, sprinkle some flour in a working surface and roll the dough as a large disc with enough thickness.
  • Using round shaped cutter, cut and make round shaped discs.
  • Place it in a flour dusted baking sheet and let it set for another hour (1 hr).
  • Pre-heat oven at 180 degree C.
  • Brush the top of faluche with the olive oil.
  • Sprinkle some flour on the top and bake it for 10-15 minutes.
  • Remove from the oven and serve.


Serving Options:

Serve with Butter, Jam or Nutella.



Note :
Faluche should have white crust so do not bake it for long time.
