Butter Biscuit ( Without Baking Powder / Baking Soda )


Sharing one of my all time favourite and easy cookies using just 3 ingredients. These tasty, buttery and crispy cookies is a perfect evening snack recipe to serve along with a glass of milk. No Baking powder or baking soda is required for these cookies yet it turns out super crispy. These square shaped cookies can also be prepared into round shaped cookies by rolling the dough into round log instead of square.


Ingredients :

170 gms Butter ( I have used Amul Salted butter )
250 gms All purpose flour / Maida
140 gms Powdered Sugar

Method :

Cream butter till soft.

Add powdered sugar to the butter and cream till it turns light and fluffy.

Now add all purpose flour to the butter - sugar mixture and combine together to form a dough.

Transfer the mixture to a working board, knead and divide the mixture into half.

Take one half of the dough and form a square shaped log.

Cover the log with a cling foil and refrigerate it for 2 - 3 hours ( or overnight, if possible ).

Repeat the same for the remaining dough.

When the cookies are ready to bake, remove the square logs and slice them into 1/4 inch thickness.

Arrange the sliced cookies in a baking tray and bake it for 23 - 25 minutes at 180 degree C in a pre heated oven.

Once done, remove from the oven and cool the baked cookies on a rack.

Transfer it into an air tight container and serve.


Serving Options :

Serve with hot Milk.


Note :

If the dough is refrigerated over night, keep it out for sometime and then slice it. This helps to slice the cookies easily without losing its shape.

Thumbprint Cookies & Virtual Birthday Treat !

Tried this delicious Thumbprint Cookies from one of a sweet n energetic blogger friend Nalini Suresh from Naliniscooking.com for her Birthday as Virtual Treat. Thank you so much for this recipe...we enjoyed it a lot :)


As the name mentioned, the cookies are lightly pressed with thumb in the middle of cookie and filled with Jam. 

Here is the recipe for Buttery, crunchy, tasty and melting cookies.....

Ingredients :
  • 1 Cup All Purpose Flour / Maida
  • 100 gms Butter
  • 1/4 Cup Sugar, Powdered
  • 1/2 Tsp Vanilla Extract
  • 1/2 Tsp Baking Powder
  • A pinch of Baking Soda
  • 1 Tbsp Jam ( Any Flavor)

Method :

  • Mix all the dry ingredients ( Flour, Baking powder and Baking soda) and keep aside.
  • Cream the butter and sugar till its turns fluffy and smooth. 
  • Add vanilla extract and mix well.
  • Now add the dry ingredients little by little and mix well.
  • Wrap the soft dough using cling foil or butter paper and refrigerate it for 30 minutes.
  • Take the dough and divide into equal balls, smooth it gently and arrange in a baking tray lined with baking sheet.
  • Gently press the top of cookie with the thumb and fill it with Jam.
  • Bake it 18 to 20 minutes in a pre-heated oven at 180 degree C.
  • Remove and cool it for 10 - 15 minutes.
  • Store it in an air tight Container.

Biscuit Sablés/Eggless French Shortbread Biscuits



Sablés are a very famous French Shortbread Biscuits. And according to wiki. it originates from Caen, in the province of Lower Normandy. The french word Sablé means "Sand" related to soft, delicate, crumbly texture and their golden color.Simple and tasty biscuits which melts in mouth due to the addition of butter. Actual Sablés are round shaped ones but I made little twist in shapes for my kid who loves car, airplane, train....... 




Ingredients :
  • 2+1/2 cups All purpose flour
  • 100 gms Softened Butter
  • 1/2 cup Powdered sugar
  • 1/2 tsp Vanilla extract
  • 3 Tbsp Milk or water





Method :
  • Beat Sugar and Butter together until they turn light and fluffy.
  • Add vanilla essence and water or Milk.
  • Beat for few more minutes and add the flour.
  • Mix well and form into a smooth dough.
  • Roll the dough using rolling pin and cut into desired shape using cookie cutter.
  • Arrange the unbaked cookies in a baking tray lined with baking sheet.
  • Bake it for 18- 20 mins in a pre-heated oven at 180 degree C.
  • Remove and cool the cookies.
  • Store it in an air tight container.

Pin - Wheel Cookies




Off late my house smells yummy coz of freshly baked cookies n cakes. I feel very lucky that I have got few special friends who is helping me a lot in baking… Tried these yummy cookies few days back for my son, who loves cookies. Whenever beep sound comes from the oven, my son used to wear my oven gloves and stand in front of it ;)

And coming to my today’s cookies.. Very easy to prepare and tastes yummy. Perfect kids friendly snacks or can also be served as evening snacks with coffee or tea. Dough can be prepared a day ahead and can be baked in batches but don’t forget to refrigerate the remaining rolled dough.



Ingredients:
  • ½ Cup Butter or Margarine
  • 1 Cup Sugar
  • 2 Tsp baking powder
  • ¼ Tsp Salt
  • 1 Egg
  • 2 Tbsp Milk
  • 1 ½ Tsp Vanilla essence
  • 2 Cups All purpose flour
  • Unsweetened chocolate


Method:
  • Melt the chocolate and cool it separate.
  • Beat butter with a mixer for a minute and add sugar, baking powder and salt, beat till combined.
  • Now add egg followed by milk and vanilla essence. Beat well and add the flour.
  • Stir in slowly and form dough.
  • Divide the dough into two half and in one half, stir in the melted chocolate and mix well.
  • Now divide each dough into two portions.
  • Roll one portion of chocolate dough on a lightly floured surface into 9*5 inch rectangle for about ¼ inch thick.
  • Now roll one portion of plain dough to the same size and carefully place the plain dough a top of chocolate dough or chocolate dough a top of plain dough.
  • Roll up the dough together and wrap it using cling foil.
  • Chill it for several hours or overnight or place it in a freezer for 1 hour.
  • Now cut the chilled dough into ¼ inch thick slices.
  • Preheat the oven at 170 degree C.
  • Place it in a baking tray and bake it for 8-10 minutes.
  • Once down, remove and cool on a rack.
  • Store it in an air tight container and serve with hot tea or coffee...




Serving Options :

Serve with coffee or Tea.

Wheat Choco chips Cookies


Ingredients :
  • 1 1/2 Cups Wheat Flour
  • 1 Tsp Baking Powder
  • 1/2 Cup Sugar, powdered
  • 1 Egg
  • 1/4 Cup Choco chips
  • 100 Gms Butter

Method :
  • Sieve wheat flour and baking powder.
  • Add butter and sugar in a separate bowl and beat it using handmixer till it turns light.
  • Add the egg and beat again.
  • Now add the wheat flour little by little and fold.
  • Add the choco chips and mix to form a dough.
  • Meanwhile, pre-heat the oven for 10 mins at  170 degree C.
  • Grease the plate using oil or butter and dust them using wheat flour or use butter paper.
  • Make small balls using the dough, gently press them in a palm and arrange in the plate or tray.
  • Bake it for 10 mins.
  • Once done, remove from the oven and cool completely.
  • Store it in an air tight container and serve.



Serving Options :

Serve with hot Tea or Coffee.

Nutella - Cornflakes Cookies




Ingredients :
  • 1 Cup Maida / All purpose flour
  • 2 tbsp Nutella
  • 1/4 cup corn flakes, crushed
  • 1 tbsp Butter
  • 1/2 tsp baking powder
  • 2 tsp condensed milk
  • 2 tsp milk

Method :
  • Preheat oven at 170 degree celcius.
  • Sieve Maida / All purpose flour and baking powder.
  • Add the crushed cornflakes to the flour and mix well.
  • Add Nutella, butter, condensed milk and milk in a separate bowl.
  • Mix well with a fork and add it to the flour.
  • Gently mix everything and knead to dough.
  • Refrigerate it for half an hour.
  • Remove and make small balls using the dough.
  • Grease the plate, place the balls and gently press them using back side of fork.
  • Bake it for 8 - 10 mins.
