Soya Chunks and Potato Kurma


Ingredients:-
2 Potato,chopped in cubes(big size)
1 onion,finely chopped
1 tomato
2 green chillies
10 soyachunks,soaked in hot salted water for 5 mins
1 tsp Turmeric powder
1 tbsp chilli coriander powder
2 tsp Ginger Garlic paste
2 tsp masala powder
1/2 cup coconut paste
3 tbsp oil
Salt for taste
Curry leaves for garnishing
Preparations:-
Pour oil in cooker and add masala powder,ginger garlic paste,onion and saute it for 2 mins,then add potatoes and soya chunks.Mean while, make paste of tomato and green chillies.Add tomato chilli paste in cooker and saute for 3 mins.Add salt,Turmeric powder,Chilli and coriander powder and little water.Leave for 4-5 whistle.Later add coconut paste and boil for 5 min.Garnish with curry leaves and serve hot with chapati or poori.

Vegetable Au Gratin


Ingredients:-
1/ 2 cup chopped beans
1/2 cup chopped carrot
1/2 cup chopped cauliflower
2 tbsp butter
3 tbsp flour
1 cup milk
1 cup vegetable stock
1 tsp salt
1/2 cup grated cheese
1 tsp chilli flakes or paprika
Preparations:-
Boil vegetables with 1 tsp of salt for 4 mins and strain the stock seperately.
Mornay Sauce:
Melt butter in a pan and add flour.Stir continously without forming lumps.Remove from flame and gradually add diluted milk(dilute 1 cup milk with 1 cup vegetable stock).Rturn to heat and cook until thickened.Add cheese and continue cooking and stirring until cheese is melted.
Place vegetables in buttered casserole,pour Mornay sauce over all and sprinkle with grated cheese and paprika or chilli flakes.
Bake it for 15 mins at 220 degrees and Serve hot.

Rawa Pongal

Ingredients:-
1 cup Rawa
1/2 cup moong dal
1 tbsp peppercorns
1 tsp jeera
3 cashewnuts,chopped
4 tbsp ghee
Salt for taste
Curry leaves
1 tsp ginger,chopped
Preparations:-
Cook moong dal in pressure cooker seperately.Roast rawa in pan without oil and keep aside.
Pour ghee in kadai and add jeera,peppercorns,ginger,chopped cashew,curry leaves.Saute for 1 min and add 3 cups of water.Bring to boil and add roasted rawa.Add salt,simmer and close for 3 min or till it gets cooked. Mix cooked rawa and dal together with extra ghee and salt if needed.
Serve hot with chutney or sambhar.

Puffed Rice Snack


This is a very light snack which requires just few minutes to prepare......
Ingredients:-
2 cup puffed rice
2 greenchillies,chopped
2 tbsp groundnut
1 tsp Turmeric powder
Curry leaves
2 garlic,crushed
4 tbsp oil
Salt for taste
Preparations:-
Pour oil in kadai and add groundnut,greeenchillies,garlic,curry leaves.Saute for 1 min and add salt and turmeric powder.Later add puffed rice and saute for 3 mins or till it become crisp.
Remove from flame and serve with chopped onions sprinkled on it.

Coconut Groundnut Chutney

Ingrediants:-
1/2 cup grated coconut
1/4 cup roasted and deskinned groundnuts
5 greenchillies
Tamarind,small ball
Salt
Tadka:-
Oil,Mustard seeds,Curry leaves
Preparations:-
Grind coconut,groundnut,green chillies,tamarind and salt with little water into fine paste.
Add tadka to the paste and serve with dosai,akki roti and idlies.....

Moong Dal-Side dish for chapati

Ingredients:-
1 cup Moong Dal(cooked)
2 green chillies
3 cloves,finelly chopped garlic
Lime juice(squeezed-full lemon)
1 tsp turmeric powder
Salt
Coriander leaves(chopped)
Tadka:-
1 tbsp oil or ghee
1tsp Mustard Seeds
1 tsp Jeera
2 Red chillies
Preparations:-
In Kadai,pour oil or ghee and add mustard seeds,jeera,chopped garlic,red chillies and green chillies.
Add turmeric powder and cooked moong dal.Add salt according to taste.
Boil with little water for sometime.Remove from the flame and add lime juice and garnish with fresh chopped coriander leaves.Serve hot with chapati.

Egg Kozhambu

Ingredients:-
3 egg
1 onion,finely chopped
1 tsp masala powder
small bay leaf
1 tsp saunf
curry leaves
1 cup Tamarind juice
1/2 cup mixture of chilli and coriander powder
1 tbsp oil
Salt for taste
Preparations:-
Heat kadai and pour oil,then add saunf,masala powder and bay leaves.Add onion and saute till transculent.Now add chilli and coriander powder,tamarind juice and salt.Cover the lid and simmer it for 10 min(till chilli powder smell goes).while boiling break egg and add directly one by one.Do not stir,it will break.leave for 10 min and garnish with curry leaves.

Sausage and Potato Gravy


Ingredients:-
4 chilli chicken sausages ,chopped in cubes
1 onion,chopped lengthwise
1 potato,chopped in cubes
1 tsp masala powder
2 tsp turmeric powder
1 tbsp ground pepper
1 tsp ginger grated
1 tsp garlic grated
salt for taste
curry leaves
Preparations:-
In a sauce pan,heat oil and brown the chopped onions.Add masala powder and turmeric powder in the hot pan.Add cubed chilli sausage. Brown the sausage and add water to boil.Cover it for 5 mins. Reduce heat to add ginger and garlic,curry leaves. Mix again and add potato cubes.
Add salt and pepper.Cover for 15 mins or until potatoes are cooked.Serve hot with rice or roti.

Akki Roti-with leftover lemon rice


This recipe can be tried with any leftover rice.Even i tried this recipe with prawn biryani....it was tasty.... Grated carrot can also be added in this recipe...
Ingredients:-
1 cup lemon rice
1 cup rice flour
2 green chillies,finely chopped
1 onion,finely chopped
finely chopped coriander leaves
finelly chopped dill leaves
salt for taste
oil
Wax paper or white polythene sheet cut into square
Preparations:-
Grind lemon rice with little water until soft.Mix rice flour,finely chopped chillies,onion,coriander leaves,dill leaves and salt in pasted lemon rice.Mix well with little oil until it forms like dough.Keep covered for 15 mins and divide the dough into balls to prepare roti.
Take wax paper or polythene sheet and sprinkle some oil and smear around.Then take balls and pat into chapati shape evenly without breaking.
Transfer into hot tawa and remove the paper slowly.Leave it for 1 min and turn otherside for 1 min....similar to roti.Serve hot with coconut groundnut chutney.


Kosambari


This is basically a karnataka salad dish..learnt from my neighbour. A light though a healthy breakfast...
Ingredients:-
1/2 cup Split moong dal(soaked for 2 hours)
1 carrot,grated
1 cucumber,finely chopped
1 green chilli,finely chopped
lemon juice(squeezed - half lemon)
coriander leaves
salt
1/2 cup grated coconut(optional if diet concious)
For Tadka:-
1 tbsp oil
1tsp Mustard seeds,1tsp urad dal,2 dried red chillies.
Preparations:-
Mix soaked moong dal, grated carrot, finely chopped cucumber, coriander leaves,lemon juice and salt.
In a pan,pour oil and add mustard seeds,urad dal,red chillies and green chillies.once spluttered add into the mixture and mix well.Grated coconut can be added at this stage.

Green Chicken

Ingredients:-
250 gms Chicken
1 tbsp ginger garlic paste
2 cloves
1 inch stick cinnamon
2 cardamom
2 dried red chillies
2 onions,finely chopped
1 tomato,finely chopped
1 bunch spinach
1 tbsp oil
Preparations:-
First wash chicken and marinate in onion,ginger garlic paste.Heat oil in a pan and add chillies,cloves,cinnamon and cardamom.Once it fried add chicken mixture and fry till half done.
Meanwhile cook spinach with 2 tbsp of water in microwave for 7 mins and puree.
Add finely chopped tomato and salt in the pan.saute for 1 min and then add spinach puree.Simmer for 20 mins or till the chicken is done.
Oil seperates once chicken is cooked.Serve with Rice or Roti.

Chicken Gonkura

siIngrediants:-
For Tadka:-
1 tbsp oil
1 tsp mustard seeds,1 tsp cumin seeds,1 tsp channa dal,2-3 dry red chillies,pinch of hing,3 cloves garlic,crushed
2 onions,thinly sliced
3 green chillies,sliced
3 small ginger strip
1 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala
1 bunch gonkura leaves,shredded
1 tsp ginger garlic paste
250 gms chicken,washed and chopped into pieces
curry leaves and coriander leaves for garnishing.

Preparations:-
In a pan,pour oil and add mustard seeds,cumin seeds,channa dal,urad dal,red chillies,pinch of hing and crushed garlic.Add sliced onions,green chillies and ginger strip and saute it for 2 mins.
Then add turmeric powder,cumin powder,coriander powder and garam masala.
Add gonkura leaves,ginger garlic paste and little oil.Saute for few min and add the chopped chicken.Cook it for few mins with little water and salt till chicken become tender and cooked properly.Remove from flame and garnish with curry leaves and coriander leaves.

Rosappu Chutney


Rosappu Chutney is a spicy chutney which is prepared with onions and dry red chillies. The name of chutney is due to its color and this tastes very delicious with hot idlis and dosas. This is one of our family's favorite chutney. Though I have used big onions for this recipe, small onions tastes very excellent and gives delicious taste. 



Ingredients :

  • 3 onion finely chopped
  • 5 dry red chillies(can add extra according to spicy)
  • Small ball of tamarind
  • Salt for taste
  • 3 tbsp gingelly oil
  • 1 tsp Mustard seeds
  • 1 tsp urad dal
  • 1 tsp channa dal
  • Few curry leaves and Coriander leaves


Method :

  • Grind dry red chillies and tamarind with little water and salt into paste.
  • In a pan,pour gingelly oil and add little mustard seeds,urad dal,channa dal and curry leaves.
  • Then add chopped onions,fry till onion is translucent and light brown(do not burn it).
  • Add the mixture and mix properly.season with little salt according to taste and add little water and bring to boil.Remove from flame and garnish with coriander leaves.
  • Serve hot with fluffy idlies / Dosas.





Mexican Rice


Ingredients:-
1 cup rice
1onion,thinly sliced
1 tomato,finely chopped
1 tbsp oil
3 Green chillies
1 Green bell pepper
2 cloves garlic,chopped
Salt for taste
1 chicken cube
1/2 tbsp cumin powder
1/2 grounded pepper
2 cup water or chicekn stock
Chopped coriander leaves
Preparations:-
In a cooker,saute rice in oil over medium heat for abt 3 mins.Pour in chicken stock or water and bring to boil.
Stir in onion,green bell pepper, tomato,green chillies.Season with chicken cube,salt,pepper and cumin powder.Then add chopped garlic and coriander leaves.Bring to boil and reduce heat to low and cook for 20 min or wait for 3 whistles.
Serve hot with egg or chicken Curry...

Carrot French Toast

Ingredients:-
2 egg white
1/2 cup skimmed milk
1/2 tsp vanilla extract(optional)
1 carrot grated
3 cashew finely chopped
2 tbsp butter
Bread slices cut in diagonal shape
Preparations:-
Mix egg white,skim milk,vanilla extract,carrot grated and finely chopped cashew.Beat the mixture for 1 min.
Dip diagonaly cut bread in egg mixture and toast in non stick with little butter.

Apple and Chicken Sandwich

Ingredients:-
1 pac Sandwich bread
1 Apple,chopped finely
250 gm chicken(boneless)
1 cup Mayonnaise
1 tbsp soya sauce
1 tbsp chilli powder
salt to taste
Preparations:-
Marinate chicken with soya sauce,chilli powder and salt for 30 mins.Cook in microwave for about 3-4 mins.Remove and cut into small pieces.
In a bowl,mix chopped chicken pieces,chopped apple,mayonnaise properly.
Just spread in toasted or plain bread or prepare sandwich with lettuce,cucumber and tomato along with this spread.

Chicken with okra

Ingredients:-
1 tbsp oil
4 chicken thighs(any parts)
1 onion,thinly sliced
2 garlic cloves,finely crushed
2 fresh red chillies or green chillies,finelly chopped
1/2 cup water
10 okra
1 tomatoes,finely chopped
salt for taste
Preparations:-
Heat the oil in a wide pan over a low heat.Season the chicken with salt and add them to the pan.cook untilgolden brown,turn them over and add chopped onion.
Saute for 5 mins,until the onion has softened,then add garlic and chopped chillies.cook for further 2 mins.Add half the water to the pan and bring to the boil.
Trim the okra and slice them into thin rounds.Add to the pan with tomatoes.Season with salt and pour the remaining water.cover and cook for 10 min or until the chicken pieces are tender and fully cooked.
Serve immediately with white rice or chapati.

Green Beans with Eggs....

Ingredients:-

10 beans,topped,tailed and halved

1 tbsp vegetable oil

1 onion,thinly sliced

3 eggs

salt and ground pepper

1/2 cup grated chedder cheese(any cheese)

strips of lemon rind to garnish

Preparation:-

Bring a pan of water to boil,add little salt and beans and cook for 5- 6 mins or until tender.drain the beans in a colander and rinse under cold water to preserve bright colour,then drain the beans once more.

Heat the oil in a frying pan and fry the onion slices for 3-4 mins until soft snd translucent.Break the eggs into the bowl and beat them with seasoning.
Add the egg mixture to the onion.cook slowly over the moderate heat stirring constantly so that egg should not moist through out.Do not overcook.
Add the beans to the pan and cook for few mins.
Tip the mixture into serving dish and sprinkle with grated cheese and lemon rind.
Serve hot.
This dish goes well with buttered spinach rice or Even this can be served for breakfast.

Buttered Spinach Rice



Wanna try something simple, healthy and easy for your kid.... Then, here it is.....

Buttered spinach rice is a flavorful rice which is prepared with the minimal ingredients. Adding generous amount of butter in this recipe gives a lovely aromatic buttery flavor to the rice. This single pot meal goes perfect with Tomato sauce or any spicy gravy.

Ingredients :

3 tbsp butter or margarine
1 onion,finely chopped
2 fresh tomatoes,chopped
1 cup Basmati rice
2 garlic cloves,crushed
2 cups water or stock
1 bunch fresh spinach,shredded
Salt to taste
1Tbsp Ground pepper

Method :

Melt butter or margarine in a cooker.

Gently fry the onion for 3 -4 mins, until soft and translucent, then stir in the fresh green chillies and chopped tomatoes.

Add the rice and crushed garlic, gently cook for 5 mins then gradually add water or stock,stirring constantly.

Season to taste with plenty of salt and ground black pepper.

Spread the spinach in a thick layer over the rice.cover and cook for 10min in low heat(or till 3 whistle)

Spoon into serving dish,dot butter over the top and garnish with mint leaves.

Serve hot.



Serving Options :

 Serve with Tomato sauce or any spicy gravy.
