Mutton Chukka Using FishandMeat Product


Happy Weekend Friends ! Finally weekend is here after a hectic weekdays and if you are planning for a delicious mutton recipe, then this post is for you :)

And coming to today's recipe, I have prepared a spicy and tasty mutton recipe using their product.

Mutton Chukka is a very famous dish in Tamil Nadu in which Chukka means Dry. So the consistency of the curry will be dry and sometimes little gravy based on one's preference. Though it is a time consuming process, the taste of the dish will be truly delicious. Hot water is added time to time to cook the mutton pieces but alternatively, the mutton pieces can also be pressure cooked and then added to the masala. Pressure cooking method is generally used to save the time of cooking. This chukka pairs perfectly with plain Rice, Rasam rice, Biryani or any variety of rice.

Here comes the recipe of delicious and flavourful Mutton Chukka..

Ingredients :

500 gms Mutton Pieces 
4 - 5 Tbsp Oil 
1/4 Tsp Fennel seeds / Saunf 
3 Big Onions, Finely chopped 
2 Tsp Ginger garlic paste 
2 Big Tomatoes, Finely chopped 
2 Tsp Chilli powder 
2 Tsp Coriander powder 
1/2 Tsp Turmeric powder 
Salt to taste 
Few Corinader leaves for garnishing 

Method :

Clean mutton pieces and keep aside. 

Heat oil in a thick bottomed pan and add fennel seeds. 

Once it starts spluttering, add finely chopped onions and saute till it turns brown. 

Add ginger garlic paste and saute until the raw smell goes off. 

Add chopped tomatoes and saute until it turns soft and mushy. 

Now add chilli powder followed by turmeric powder and coriander powder. 

Mix well and add 1/4 cup of water.  

Let it cook in a medium flame until oil separates from the masala. 

Now add the cleaned mutton pieces and required amount of salt to the masala. 

Mix well, cook it for a minute and add hot water from time to time till the mutton pieces get cooked. 

Once mutton is cooked well and all the moisture is evaporated, remove from the flame. 

Garnish with coriander leaves and serve hot.


Serving Options :

Serve with Plain rice, Rasam rice and Biryani.

Spicy Mutton Fry using FishandMeat Product


Spicy Mutton fry is a perfect side dish to serve with Rasam rice when you are down with cold during the winter season. Apart from Rasam rice, this fry goes well with plain rice and also, with sambhar rice. Frying chilies in an oil before adding the cooked mutton masala enhance the spiciness in the fry and in addition gives a delicious taste. The freshly ground pepper gives an extra punch to the dish. If you are a spicy food lover, then this mutton recipe is a must try dish.


After started getting fresh meat and seafood from FishandMeat, my frequency of traveling to market has reduced. Ordering the product is also quite easy either I have to order using their App or just through whatsapp. Recently received an IQF done mutton pieces from FishandMeat and the taste was similar to the fresh ones. IQF (Individual Quick Freezing ) is one of the freezing method followed in the food industry. Apart from meat, any smaller pieces of food items like berries, small fish, poultry, prawns and diced vegetables can be stored by this method. This method helps the product to retains its shape, color, taste, and smell.


The product has to be removed from the freezer only before starting the cooking process. Just drop the packet in a big bowl of water for about 20 minutes. This helps the meat to de-freeze and later, it can be used for cooking.


                The meat looked fresh and tender as shown in the pic below after 20 minutes. 


I have to thank FishandMeat for introducing such a technique which indeed helped me to learn more about this freezing method. I prepared a spicy fry out of this meat which turned out really yummy and here comes the recipe...

Ingredients :

250 gms Mutton pieces 
2 Big Onions, finely chopped 
1 Big Tomato, finely chopped 
1 Tbsp Ginger garlic paste 
1/2 Tsp Turmeric powder 
1 Tsp Red chili powder 
1 1/2 Tsp Coriander powder
1 Tsp Jeera / Cumin powder 
Salt to taste 
4 - 5 Green chilies, slit
3 Tbsp Oil 
2 - 3 Tbsp Freshly ground Pepper powder 
2 Sprigs of Curry leaves 
Method :

Wash mutton pieces and add it in a pressure cooker along with finely chopped onions, tomato, ginger - garlic paste, turmeric powder, chili powder, coriander powder, cumin powder and a little salt. 

And 3/4 cup of water and pressure cook it for 1 whistle and simmer the flame for 15 - 20 minutes. 

Once done, switch off the flame and wait until the pressure gets released from the cooker. 

Heat oil in a pan and add green chilies. 

Fry it for half a minute and remove from the pan. Keep aside. 

Add curry leaves followed by cooked mutton masala along with the water and cook until the water reduces. ( adjust salt, if necessary ). 

Add freshly ground pepper powder and the fried chilies back to the fry. 

Cook it for another couple of minutes. 

Switch off the flame and serve hot. 


Serving Options :

Serve with plain rice, sambhar rice or rasam rice.

Mutton Chops Kuzhambu






Mutton chops is nothing but ribs which is considered to be a flavorful part of the goat meat. Varieties of dishes can be prepared using this and click HERE to check out my old post using chops. I have used pressure cooker method in this recipe to speed up the process. Addition of pepper powder at the last stage of cooking enhances the taste and gives a spicy flavorful curry which goes yummy with hot rice, idly or dosa.


Ingredients :

12 Mutton Chops 
2 Big Onions, Chopped 
2 Tomatoes, chopped 
1 Tbsp Ginger - garlic paste 
1 1/2 Tbsp Oil 
1 inch Cinnamon stick 
1 Star anise
2 Elachi 
1/2 Tsp Saunf / Perunjeeragam 
2 Bay leaves
1/4 Tsp Turmeric powder 
1 Tsp Red chilli powder
1 Tsp Coriander powder
1/2 Tsp Garam masala powder
1 1/2 - 2 Tsp Pepper powder 
Salt to taste 
1 1/2 Cups Water

Method :

Grind the chopped onions and ginger garlic paste together to a fine paste and keep aside.

Grind the chopped tomatoes to a fine paste and keep aside.

Heat oil in a pressure cooker and add bay leaves followed by saunf, star anise, cinnamon and elachi.

Fry it and add the onion paste.

Saute till the raw smell of onion and ginger - garlic goes off.

Add the tomato paste and cook it for a minute.

Now add the masala powders ( turmeric, chilli, garam masala and coriander ) along with the required amount of salt.

Mix well and cook it for couple of minutes.

Add the washed chops followed by the measured amount of water.

Close the cooker lid and pressure cook it for 1 whistle.

Then, completely simmer the flame and cook it for 15 minutes.

Once done, switch off the flame and wait till the pressure released from the cooker.

Now add the pepper powder and adjust salt.

Cook it again for 5 minutes or till the kuzhambu gets its thick consistency.

Switch off the flame, garnish with curry leaves and serve hot.





Serving Options :

Serve with hot rice, Idly and Dosa.

Mutton n Chayote Kurma / Mutton n Chow chow Kurma - Pressure cooker Method




 Ingredients :

  • 1/2 Kg Mutton, chopped into pieces
  • 1 Chayote / Chow Chow, peeled and chopped into cubes
  • 2 Cups Onions, Finely chopped
  • 1 Cup Tomatoes, Finely chopped
  • 2 - 3 Green chillies, sliced
  • 1 Tbsp Ginger - Garlic Paste
  • 1 Tsp Turmeric Powder
  • 1 1/2 Tbsp Chilli - Coriander powder
  • Salt to taste
  • 1/2 Cup Coconut paste
  • 2 Tbsp Oil
  • 2 Bay leaf
  • 2 Star Anise
  • 1 Elachi
  • 1 inch Cinnamon stick, crushed
  • Curry leaves for garnishing

Method :
  • Heat oil in a pressure cooker and add the masala items ( Bay leaf, Elachi, cinnamon and star anise ).
  • Add the chopped onions, saute for a minute and add the ginger - garlic paste.
  • Fry them for a minute or till the raw smell goes off.
  • Add the chopped tomatoes and green chillies,saute well for couple of minutes.
  • Add the turmeric powder, salt and chilli - coriander powder.
  • Mix well, add the chopped chayote and mutton pieces.
  • Add water, mix well and close the lid.
  • Wait for a whistle, simmer the flame for 20 minutes and switch off.
  • Once the pressure released completely, open and add the coconut paste to kurma.
  • Cook for another couple of minutes.
  • Switch off the flame and garnish with curry leaves.


Serve with hot rice..... And this goes well with Indian breads and with hot n soft Idlis / Dosas.....

Mutton Soup - Easy Version

This easy version always reminds my childhood days....waiting in front of cooker while my mom cooks mutton for the fry or kurma...she used to serve that mutton water by adding pepper and salt in small tumbler..wow...used to taste awesome..
Later i started improvising by adding cooked toor dal in that soup to get the consistency..sometimes i used to have this with hot rice too..
 Few days back,  posted my mutton fried rice recipe and had mentioned that, will post mutton soup with the reserved mutton water....Here is the easy mutton soup....



Ingredients:

Section A :

250 Gms Mutton
1 Onion, finely chopped
1 Tomato, finely chopped
1 Tbsp Ginger Garlic paste
1 Tsp Turmeric powder
1 Tsp Chilli powder
1 Tsp Mutton masala
Salt to taste

Section B :

1 Cup Toor dal, cooked and mashed
1 Tsp pepper powder
Coriander leaves for garnishing

Method :

Pressure cook the section A ingredients for 20 minutes or until the mutton gets cooked.
Wait for the steam to release and remove the mutton pieces separately.
Now heat the reserved mutton water and add the mashed toor dal.
Let it boil for couple of minutes. Adjust salt and add pepper powder.
Turn off the flame and add coriander leaves before serving.



Note :

Adjust pepper powder according to your spicy level.
Even saunf tempering can be done for the extra flavor.

Mutton Fried Rice

When it comes fried rice, i used to prepare with egg, chicken, sausage or with veggies...never tried with mutton..Had some leftover mutton in freezer, so first thought of preparing Rasam rice and pepper mutton fry (one of my all time fav ;) ) but unfortunately noticed that there was very little coriander leaves to prepare rasam :( It was always upsetting to change the recipe from your fav ...Then swapped my recipe to Mutton Fried Rice...No regrets after preparing and tasting this..Loved this and was yummy too..Finally our lunch menu ended with Hot Easy mutton soup and Mutton fried rice!!

 

 Ingredients:

250 Gms Mutton
1 Onion, finely chopped
1 Tomato, finely chopped
1 Tbsp Ginger Garlic paste
1 Tsp Turmeric powder
1 Tsp Chilli powder
1 Tsp Mutton masala
Salt to taste

1 1/2 Cups cooked rice, Raw rice or basmati rice
1 Cup Cabbage, shredded
1 Cup Capsicum, shredded
2 Tsp Worcestershire sauce
1 Tsp Pepper powder
1 Egg
1 Tbsp oil
Handful of Spring onions, chopped




Method:

First let us start with cooking the mutton...

Mix onions, tomato, ginger garlic paste, mutton masala powder, salt, turmeric powder and chilli powder .



Add water and pressure cook for 20 minutes or until mutton gets cooked.


Now remove only the mutton pieces and chop finely.


Reserve the remaining mutton flavored water for the Easy Mutton Soup recipe...Will post that soon...

Now keep everything ready...lets us start our mutton fried rice..

Heat oil in a pan and add the egg. Scramble it and fry it for a minute.


Add the shredded cabbage and saute well for 2 -3 minutes.


Add the capsicum now and saute again for a minute.


Now add the chopped mutton pieces and mix well..keep in simmer for couple of minutes.


Add the sauce, pepper powder and salt. Mix well and fry it for a minute.


At this stage, add the cooked rice and mix well. Simmer and mix well so that the flavors get mixed.


Switch off the flame and add the chopped spring onions.


Serve hot with tomato sauce.
