Sharing one of my favorite breakfast during dieting days. Very healthy, diet - friendly and filling breakfast which can be prepared in a short time. I have added dill leaves for the extra flavor but its optional. Adding too much of dill leaves will dominate the flavor of dish, so add according to it. This can also be served as Mid - Morning or Mid - Evening Snacks.
2 Cups Sweet corn kernels
1 Big Onion, Finely chopped
2 Green chillies, sliced
1 Tbsp Groundnuts
1 1/2 Tbsp Dill leavess, Finely chopped
1 Tbsp Olive oil / any cooking Oil
1 Tsp Jeera / Cumin seeds
A pinch of Hing
A pinch of Turmeric powder
1 Tsp Lemon Juice
Salt to taste
Wash the sweet corn kernels and keep aside.
Heat oil in a pan and add Jeera followed by Groundnuts, Hing and Turmeric powder.
Add the chopped onions along with sliced green chillies and saute till the color changes into light brown.
Add the sweet corn and saute it for a minute in a medium flame.
Add salt, sprinkle little water and cover it for couple of minutes in a low flame.
Now add the chopped Dill leaves, mix well and cook it for a minute.
Switch off the flame and add lemon juice.
Mix well and serve hot.
