Diet Friendly Beans Parupu Usuli / Diet Friendly Recipe -2 / #100dietrecipes


Everyone must be familiar with this popular side dish from Tamil Brahmin side in Tamil nadu. This is as such a healthy side dish prepared using Toor dal and channa dal but requires extra oil to get the exact traditional texture and delicious taste. To make it healthier, I have included 6 varieties of protein rich ingredients in this recipe along with just 1 Tbsp of Olive oil. Instead of compromising the taste during dieting, switch into such types of healthy foods and enjoy your meal. This goes excellent with Vatha kuzhambu or any Kara kuzhambu and Personally, I used to have this as snack when I am on dieting which is very filling too. The beans is cooked separately and added to the ground dal to maintain the texture and crunchiness.
The same recipe can be prepared using Kothavarangai / Cluster beans, Vazhai poo / Banana flower, cabbage etc. Altogether, this recipe can be called as complete protein packed side dish. Here comes the recipe....


Ingredients :

2 Cups Beans, Finely chopped
2 Tbsp Toor dal
2Tbsp Channa dal
2 Tbsp Horse gram / Kollu
2 Tbsp Moong dal 
2 Tbsp Rajma
2 Tbsp Black chickpea 
2 - 3 Dry red chillies ( according to taste bud )
Salt to taste
1 Tbsp Olive oil 
Handful of Curry leaves 
1 Tsp Jeera
1/2 Tsp Turmeric powder
A pinch of Hing 

 Method :
  
Wash and soak all dals ( Moong, Toor, Channa, Black chickpea, Rajma and Horse gram ) for 4 hours. 

Add the chopped beans in a pan followed by 1- 2 Tbsp of water and salt.

Simmer the flame, cover and cook till it gets cooked.  

Remove and keep aside.

Drain the water from the soaked dal and grind it coarsely in a mixie ( without adding water ) along with dry red chillies. 

Transfer it to a round pan and steam it for 10 - 15 minutes.

Cool the steamed mixture and grind it again in a mixie ( Just 2 -3 pulse to remove the lump ).

Heat oil in a non stick pan and add Jeera / Cumin seeds followed by Hing, Curry leaves and Turmeric powder. 

Add the steamed dals along with salt and saute for 5 minutes in a medium flame. 

Now add the cooked beans and mix well.

Simmer the flame and cook for another 5 minutes.

Once done, remove the flame and serve hot.


Serving Options :

Serve hot with Rice and Vatha kuzhambu, Kara kuzhambu or Rasam.
