Gnocchi, a thick and soft dumplings is an Italian cuisine, which is prepared using potato, flour and egg. The word "gnocchi" may derived form the italian word nocchio, making a knot in wood. Gnocchi is generally poached and sauteed in butter along with a herbs or lots of variations can be made like adding tomato sauce, white sauce, spinach sauce etc. Usually, I prepare gnocchi using white flour and generous amount of butter to get a flavorful dish. But being on diet, tried my favorite dish by replacing flour and butter by wheat flour and olive oil. It tasted delicious and the happiness of having our favorite dish in a healthy way is really immeasurable. The dough which is prepared using egg white, wheat flour and sweet potato is poached in a salted water and sauteed along with veggies to give a healthy and yummy meal. Personally, no side dish is required for us but tomato sauce can also be used as an accompaniment.
Ingredients :
1 1/2 Wheat Flour + extra for dusting
1 Egg White
1 Cup Sweet potato, Boiled and mashed
Salt to taste
For Stir Fry :
1 Big Onion, cut into cubes
1 Cup Colored Capsicum, cut into small cubes
1 Cup Cabbage, chopped
1/2 Cup Peas
1 Tsp Red chilli sauce
1/2 Tsp Soya sauce
1 Tbsp Tomato sauce
Salt to taste
1 Tbsp Olive oil
1 Tsp Italian seasoning
3 Tbsp Spring onion leaves, finely chopped
Method :
Mix wheat flour along with egg white, salt and mashed sweet potato in a large bowl.
Combine all the ingredients and knead to form a dough.
Do not add more flour which turns the gnocchi too hard.
Divide the dough into 5 equal balls.
Take one ball, sprinkle generous amount of wheat flour and roll it gently pushing with fingers to form an evenly distributed long rope.
Cut the dough rope in to 1 inch pieces using pizza cutter or knife.
Using fork, press the one inch dough on both the sides and keep aside.
Boil water along with salt in a large pot, add the shaped gnocchi and cook it for 5 minutes or till the gnocchi floats on top.
Once done, gently remove them, drain the water and keep aside.
Heat oil in pan and add the chopped onions.
Saute for a minute and add the chopped cabbage along with peas.
Cook it for couple of minutes in a low flame and then add colored chopped capsicum.
Saute for a minute and add soya sauce followed by red chilli sauce, tomato sauce and salt.
Saute it for couple of minutes and add the cooked gnocchi.
Add Italian seasoning, mix well and toss it for another couple of minutes.
Garnish with spring onion leaves and serve hot.
