There are two varieties of sambhar powder which we follow and this is one of the simple masala powder prepared using minimal number of ingredients. And this is particularly used for Tiffin sambhar which goes delicious with Idly, Dosa and Pongal. Just 2 Tbsp of this aromatic powder enhances the taste of sambhar. The procedure of making this powder is also very simple as only dry roasting and grinding part is involved.
8 - 10 Dry red chillies ( Adjust according to taste bud )
2 Tbsp Coriander seeds
1/4 Cup Toor dal
2 Tbsp Chana dal
2 Tsp Cumin seeds
1/2 Tbsp Pepper corns
1/4 Tsp Hing powder
Add toor dal in a kadai / pan and dry roast till the color changes in a medium flame.
Once done, remove from the flame and repeat the same process for the remaining ingredients except Hing powder.
Cool the dry roasted ingredients completely and grind into fine powder.
Add hing powder while grinding the roasted ingredients.
After grinding, transfer it to a plate and cool it.
Transfer it to an air tight container.
While preparing sambhar, add 2 Tbsp of this freshly ground powder.
