Green Pulao using Brown Rice / Diet Friendly Recipe - 45 / #100dietrecipes


Fresh green leafy veggies really makes me go crazy. The freshness and color of veggie tempts me so much that I end up buying them immediately. Luckily, my family also shares the same taste bud to include such types of healthy veggies in our regular diet menu. My today's recipe is also using only greens including green chillies. Infact, this recipe can also be named as green mirchi pulao, as chillies are the only ingredient to make the pulao spicy and absoultely, no masala powders required for this recipe. Very healthy because of the addition of palak / spinach, mint and coriander and lemon juice is added to balance the green chilli taste. This delicious rice goes yummy with low fat curd onion raita. The greens are sauteed in a half teaspoon of oil is made in to fine paste and added to the onion mixture is further cooked along with brown rice in an electric rice cooker. In this recipe, I have used only shajeera for seasoning and if it is not available, it can be substituted with the regular spices like bay leaf, cinnamon, elachi etc.


Ingredients :

1 Cup Brown Rice ( I have used Dawaat brand )
1 Big Onion, Sliced
4 Green chillies, chopped
1 Cup Chopped Spinach leaves
1 Cup Mint leaves
1/2 Cup Chopped Coriander leaves
1/2 Tsp Shajeera
2 Tsp Ginger garlic paste
2 1/2 Cups Water
Salt to taste
2 1/2 Tsp Olive oil

Method :

Wash and soak the brown rice for 2 hours.

Heat 1/2 tsp oil in a pan and add the chopped greens ( spinach, mint and coriander ) along with the chopped green chillies.

Saute them for couple of minutes in a low flame and remove from the pan.

Cool and grind into fine paste. Keep aside.

Heat the remaining oil in the same pan and add shajeera followed by sliced onion.

Saute till it turns translucent and add ginger garlic paste.

Saute till the raw smell goes off.

Now add the ground paste followed by salt, mix well and cook for 5 minutes.

Drain water from the soaked brown rice and evenly spread in an electric rice cooker.

Now spoon in the green masala evenly on top of the rice.

Add the measured water followed by lemon juice and adjust salt.

Gently mix well and cook till the electric cooker mode turns to keep warm.

Once done, switch off the cooker and keep it aside for 5 - 10 minutes.

Serve hot.


Serving Options :

Serve hot with onion raita.
