Healthy breakfast keeps our mind fresh and energetic, the whole day. It should be simple yet very filling, so I prefer sandwich or toast with any fresh juice or fruits for breakfast. Today instead of slicing the sausages and preparing sandwich, tried this stir fry with the toasted bread. Simple and delicious stir fry and have to mention that it is very filling too because of the addition of eggs which keeps us running the whole day. Variations can be done by adding veggies along with the sausages to make it more delicious or it can be mixed with plain cooked rice to prepare sausage rice for lunch....
Cooking Time : 20 Minutes
Ingredients :
- 4 Sausages, grated
- 1 Onion, finely chopped
- 2 Eggs
- 2 Green chillies, Finely chopped
- Salt to taste
- 1/2 Tbsp Pepper powder or crushed pepper
- 1/2 Tbsp Oil
- Few coriander leaves, for garnishing
Method :
Heat oil in a pan and add the chopped onion. Saute for a minute and add the chopped chillies.
Now add the eggs and scramble them.
Mix well and add the salt and pepper powder.
Cook until it becomes dry and remove from flame.
Garnish with coriander leaves and serve.
Serving Options :
Serve with Toasted breads and fresh juices. This can also be used as stuffing for sandwiches.
