This healthy, smooth and protein rich soup is prepared using yellow zucchini, tomato and 3 varieties of dals. Zucchini is also known as courgette is a summer squash, which is available in two colors ( yellow and green ). It can be eaten as raw, grilled, sauteed or boiled. Zucchini is the best source of dietary fiber and also contains vitamin A, magnesium folate, potassium, copper and phosphorus. It also helps in weight management due to its high fiber, moisture content and low calorie content. In this recipe, I have pressure cooked the yellow zucchini along with tomato and 3 varieties of dal along with water is further blended into smooth paste to give a nutritious soup.
1 Yellow Zucchini ( I have used yellow zucchini ), chopped
1 Big Tomato, chopped
1 Tbsp Masoor dal
1 Tbsp Chana dal
1 Tbsp Moong dal
3 - 4 Garlic pods
2 1/2 Cups Water
Salt to Salt
1 Tbsp Crushed Pepper
Wash all the dals and add it to pressure cooker along with the chopped zucchini, tomato and garlic pods.
Add 2 cups of water and pressure cook it for 6 - 7 whistles.
Once done, switch off the flame and cool it.
Once the pressure gets released, open and blend the zucchini - dal to smooth paste.
Add the remaining water along with salt and pepper.
Boil it again for couple of minutes.
Serving Options :
Serve hot with Toasted bread.
