My today's recipe is using an unique combination of ingredients and healthy too. The snake gourd pieces are sautéed in an oil along with other ingredients and ground into fine paste. The addition of basil leaves gives a refreshing flavour and this pairs perfectly with Idly and Dosa.
Ingredients :
1 Tbsp Oil
1 Cup Snake Gourd, Finely chopped
Handful of fresh Basil leaves
4 - 5 Garlic pods
Small piece of Tamarind
3 - 4 Dry red chillies ( Adjust according to taste bud )
Salt to taste
For Tadka :
1 Tsp Oil
1 Tsp Urad dal
1 Dry red chilli
A pinch of Hing powder
Method :
Heat oil in a pan and add chopped snake gourd.
Saute it for a minute and add the remaining ingredients except salt.
Saute for 3 - 5 minutes in a low flame or until the snake gourd gets cooked.
Once done, remove from the flame and cool the ingredients.
Grind into fine paste by adding the required quantity of salt and water.
Transfer it to a bowl and keep aside.
For tadka, heat oil in a pan and add urad dal followed by red chilli and hing powder.
Fry and add it to the prepared chutney.
Serving Options :
Serve with Idly or Dosa.
