Rajma / Kidney beans is quite popular in North India for its Rajma Chawal and Dal Makhani. Both the dishes are absolutely delicious and served with Rice or Roti. Kidney beans have huge health benefits as it is rich in iron and protein. Many interesting recipes can be prepared using these beans and sharing few recipes here which I had posted long ago.

Rajma Dosa
In this chutney, I have roasted the tomatoes to enhance the flavour of chutney but it can also be used as such. If you are bored of regular curry or rice using Rajma, then this is one of the brilliant way to include proteins in our regular diet. This chutney can be served wit Idly or Dosa. Adjust the quantity of chilli according to taste bud.
Ingredients :
2 Tsp Oil
2 Big Tomatoes
1/2 Cup Rajma ( Cooked )
4 - 5 Dry red chillies ( adjust according to taste bud )
Small piece of Ginger
3 Tbsp Coconut, grated
Salt to taste
Fresh Coriander leaves for garnishing
To Tadka :
1 Tsp Oil
1/2 Tsp Mustard seeds
1/2 Tsp Urad dal
A pinch of Hing powder
Method :
Brush oil on the skin of tomatoes and roast them on a direct flame until it gets roasted.
Once done, wash the tomatoes to remove the black parts and chop them finely. Keep aside.
Now heat oil in a pan and add dry red chillies.
Roast and add grated coconut followed by ginger piece and roasted tomatoes.
Saute it for a minute, remove from the flame and cool them.
Add cooked rajma in a blender along with the sautéed ingredients and grind into fine paste by adding the required quantity of salt and water.
Once done, transfer it to a bowl and keep aside.
For tadka, heat oil in a pan and add mustard seeds.
Once it starts spluttering, add urad dal and hing powder.
Add tadka to the prepared chutney, garnish with coriander leaves and serve.
Serving Options :
Serve with Idly or Dosa.

DeleteThe colour of the chutney is super.. light pastel shade. The combination of ingredients is what I am actually loving. Pulse, Coconut and the inclusion of tomatoes. Super Looking and an awesome accompaniment to Adai or dosai. Love this!
