Coconut & Dried cranberry chutney is a spicy, mild sweet and mint tangy chutney prepared using just 3 ingredients. Coconut, green chillis and cranberries are sautéed in an oil and then made into fine paste. This chutney can also be prepared without sautéing but when it is done, the taste will be yummy and also stays fresh for long time. The tangy and sweet flavour from dried cranberries balance the spicy taste from chillies and gives a refreshing chutney. Adjust the quantity of chili and cranberry according to taste bud. This chutney goes well with Idly, Dosa and Curd rice.
Ingredients :
2 Tsp Oil
1/2 Cup Coconut, grated
7 - 8 Dried Cranberries
4 - 5 Green chillies, chopped ( Adjust according to taste bud )
Salt to taste
Method :
Heat oil in a pan and add green chillies followed by coconut and dried cranberries.
Saute for a minute and remove from the flame.
Add the required quantity of salt and grind into fine paste.
Transfer it to a bowl and serve.
Tadka / Thalimpu is optional.
Serving Options :
Serve with Idly, Dosa and Curd rice.
