Tofu - Bell pepper bhurji is a scrambled tofu tossed with colored bell peppers / capsicum and spices. This healthy side dish can be served with Phulka or Bread toast. Apart from serving as side dish, this can also be used as stuffing for bread sandwich or wrap. The same recipe can be made more nutritious by adding more veggies like carrot, cabbage, peas etc.
1 Tsp Olive oil / cooking oil
1/4 Tsp Cumin / Jeera seeds 1/2 Cup Tofu, crumbled
1 Cup Colored Bell pepper / Capsicum, finely chopped
1 Onion, finely chopped
2 Green chillies, finely chopped
1 Tomato, finely chopped
3 Tbsp Spring Onion leaves, finely chopped
Less than 1/4 Tsp Turmeric powder
1/4 Tsp Red chilli powder
1/4 Tsp Cumin / Jeera powder
Salt to taste
Heat oil in a pan and add cumin seeds followed by green chillies and finely chopped onion.
Saute till the onion turns translucent and the finely chopped tomato.
Saute till the tomato turns soft and add the colored bell pepper / capsicum.
Mix well and add turmeric powder followed chilli powder, cumin powder and salt.
Cook it for an minute and add the crumbled tofu.
Mix well and cook it for another 5 minutes in a low flame.
Once the veggies gets cooked, add the chopped spring onion leaves and remove from the flame.
Serving Options :
Serve hot wit Phulka or Bread toast.
