Healthy and spicy side dish prepared using mixed veggies and spinach puree goes delicious with phulka or Roti. Apart from the given veggies, any nutritious veggies like gobi, colored capsicum, raddish etc can also be added to make it more delicious.
2 Tsp Olive oil
1/4 Tsp Shajeera
2 Bay leaves
2 Onion, chopped
2 Green chillies, chopped
2 Tsp Ginger Garlic paste
1 Tomato, chopped
1 Cup Spinach Puree ( Blanch the leaves and grind into fine paste )
10 Beans, chopped
1 Capsicum, chopped
1 Carrot, chopped
1/2 Cup Green peas
1/4 Tsp Chilli powder
1/4 Tsp Jeera / Cumin powder
1/4 Tsp Garam Masala
Salt to taste
1 Tsp Lemon Juice
Add chopped carrot along with beans, capsicum and peas in a microwave proof bowl.
Add little water and microwave it for 5 minutes.
Once done, remove from the microwave and keep aside.
Grind chopped onion along with green chillies and ginger - garlic paste into fine paste and keep aside.
Heat oil in a pan and add shajeera followed by bay leaves.
Add the ground onion paste and saute for a minute.
Add the spinach puree and saute it again for couple of minutes minutes.
Now add chilli powder followed by jeera powder, garam masala and salt.
Saute till the raw smell goes off and add the microwave cooked veggies.
Add 1/2 cup of water, mix well and simmer and cook it for 10 minutes or till it gets a gravy consistency.
Once done, switch off the flame and add the lemon juice.
Mix well and serve hot.
Serving Options :
Serve hot with Phuka or Roti.
