Here comes my favorite part of breakfast "healthy soup" and personally, I love to have with bread toast or wheat bread croutons. This delicious and healthy soup is prepared using goodness of vegetables and spinach leaves. A bowl of soup can be served as breakfast along with a toasted bread and salad or also can be served as mid morning or evening drink. Apart from the given vegetables, additional veggies can be included like cauliflower, broccoli, peas etc to make it more nutritious.
2 Bay leaves
3 Garlic pods, finely chopped
1 Carrot, finely chopped
1 Capsicum, finely chopped
10 beans, finely chopped
1/2 Cup cabbage, finely chopped
1 Tomato, finely chopped
1 Cup Spinach leaves, chopped
2 Tbsp masoor dal
2 Cups Water
2 Tsp Olive oil
Salt to taste
1 Tsp Crushed pepper corns or pepper powder
Heat olive oil in a pressure cooker and add bay leaves followed by garlic.
Add all the veggies one by one and saute it for couple of minutes.
Add spinach leaves followed by masoor dal and mix well.
Add the measured water along with required amount of salt and pressure cook it for 5 - 6 whistles.
Once done, switch off the flame and let the pressure gets release.
Open the lid, remove bay leaves and blend the veggies using blender into smooth consistency.
Boil the soup again for couple of minutes by adding pepper and adjust salt if necessary.
Transfer it to a bowl and garnish with basil leaves.
Serving Options :
Serve hot with wheat bread croutons.
