Paneer Veggie Toast

Ingredients :

10 Bread Slices
5 Eggs
1 Cup Paneer, grated
1/2 Capsicum, finely chopped
1/2 Cup potato, grated
1/2 Cup Carrot, grated
2 Green chillies, finely chopped
Handful of spring onions, chopped
Salt to taste
1/2 Tbsp oil
Oil/ Butter to toast

Method:

Heat oil in a pan and add chopped capsicum, saute for a minute and add the grated potato followed
by carrot, green chillies, paneer and spring onions.
Add salt and saute for couple of minutes.
Meanwhile beat eggs separately.
Now add the paneer veggie mixture to beaten eggs.Mix well and adjust salt.
Take bread slice and dip in egg mixture and toast in tawa using butter or oil.
Serve with ketchup.
