Mutton Fried Rice

When it comes fried rice, i used to prepare with egg, chicken, sausage or with veggies...never tried with mutton..Had some leftover mutton in freezer, so first thought of preparing Rasam rice and pepper mutton fry (one of my all time fav ;) ) but unfortunately noticed that there was very little coriander leaves to prepare rasam :( It was always upsetting to change the recipe from your fav ...Then swapped my recipe to Mutton Fried Rice...No regrets after preparing and tasting this..Loved this and was yummy too..Finally our lunch menu ended with Hot Easy mutton soup and Mutton fried rice!!

 

 Ingredients:

250 Gms Mutton
1 Onion, finely chopped
1 Tomato, finely chopped
1 Tbsp Ginger Garlic paste
1 Tsp Turmeric powder
1 Tsp Chilli powder
1 Tsp Mutton masala
Salt to taste

1 1/2 Cups cooked rice, Raw rice or basmati rice
1 Cup Cabbage, shredded
1 Cup Capsicum, shredded
2 Tsp Worcestershire sauce
1 Tsp Pepper powder
1 Egg
1 Tbsp oil
Handful of Spring onions, chopped




Method:

First let us start with cooking the mutton...

Mix onions, tomato, ginger garlic paste, mutton masala powder, salt, turmeric powder and chilli powder .



Add water and pressure cook for 20 minutes or until mutton gets cooked.


Now remove only the mutton pieces and chop finely.


Reserve the remaining mutton flavored water for the Easy Mutton Soup recipe...Will post that soon...

Now keep everything ready...lets us start our mutton fried rice..

Heat oil in a pan and add the egg. Scramble it and fry it for a minute.


Add the shredded cabbage and saute well for 2 -3 minutes.


Add the capsicum now and saute again for a minute.


Now add the chopped mutton pieces and mix well..keep in simmer for couple of minutes.


Add the sauce, pepper powder and salt. Mix well and fry it for a minute.


At this stage, add the cooked rice and mix well. Simmer and mix well so that the flavors get mixed.


Switch off the flame and add the chopped spring onions.


Serve hot with tomato sauce.
